- small white eggplant - about 2-3 pieces;
- fine s alt, black pepper - use in your own waytaste;
- wheat flour - about 2/3 cup (for rolling vegetables);
- olive mayonnaise - about 3 large spoons;
- vegetable oil - optional;
- thick fat sour cream - 2 large spoons;
- medium garlic cloves - 2 pcs;
- hard cheese (you can take any variety) - about 80 g;
- small fleshy tomatoes - 4-5 pieces;

Preparation of ingredients

After that, the vegetables are laid out in ordinary drinking water, boiled for 5 minutes (after boiling the liquid), and then thrown into a colander and deprived of moisture as much as possible.
As for the red bell pepper, it is also thoroughly washed, removing seeds and stalks. Then it is twisted in a meat grinder along with a pod of hot pepper.
The process of cooking on the stove and seaming the product
After the sweet bell pepper sauce is ready, put it on the stove and stir well. In the process of boiling, s alt, sunflower oil and sugar are added to the vegetable gruel.
After boiling the ingredients for about 10 minutes, they spread the previously boiled eggplants to them. Table vinegar and crushed garlic cloves are also added to the dishes.
By mixing the products with a spoon, they get a very fragrant and bright mass. It is boiled for exactly 5 minutes, after which it is distributed among sterilized jars.

Then the garlic cloves are separately cleaned and crushed with a press. Having combined both vegetables in one container, they are thoroughly mixed. After that, they begin to prepare the marinade.
A mixture of water and sunflower oil is boiled in a large saucepan, then fine s alt and white sugar are added. After removing the dishes from the fire, table vinegar is spread to its contents.
Winter preparation process
Once the marinade and the main vegetables are prepared, proceed to the formation of the snack. To do this, put eggplant circles with garlic in 750 g jars and immediately pour them with fragrant boiling marinade, not reaching the edges of the 2 cm container.
Covering the dishes with a lid, put it in an enamel basin with water and bring to a boil. In this form, the winter snack is sterilized for ¼ hour. After a while, marinade is added to it (right to the top) and immediately rolled up.
Completely cooled white eggplant blank, it is sent to the pantry. To get a more fragrant and rich dish, vegetables are kept in a dark place for 25-30 days. After this time, the snack can be safely presented to your family members.
