  • 2 tablespoons uns alted butter, melted;
  • 2 spoonsextra virgin olive oil;
  • 1.5kg pink potatoes;
  • 4 pcs shallots, sliced lengthwise;
  • 1 tsp coarse sea s alt;
  • 8 sprigs of thyme.

How to make it?

Preheat the oven to 190 degrees. In a small bowl, combine the two oils. Grease the bottom of a round baking dish with the butter mixture. Using a vegetable peeler or food processor, slice the potatoes very thinly.

Spread the chopped potatoes vertically in a bowl. Insert some shallots between its slices. Sprinkle with s alt and brush with the remaining oil mixture. Bake 1 hour 15 minutes. Add thyme and continue baking until crispy in the oven (about 35 minutes).
