Adjika is prepared as follows. It is necessary to take one kilogram of carrots, onions, sour apples and bell peppers. Tomatoes will need 2 kilograms. For the recipe, you also need to take a glass of granulated sugar, 100 grams of garlic, half a liter of vegetable oil, half a glass of sea s alt (preferably with spices), 100 milliliters of 9% vinegar and three chili peppers.
All vegetables must be peeled and washed well. We also wash the apples. We make tomato paste from tomatoes using a meat grinder or blender. Pour it into a saucepan and put it on fire. In the meantime, chop all the other vegetables with a meat grinder. Grind the apples after removing the core.
When the tomato boils, put vegetables and apples into the pan. Next, pour in vegetable oil, pour s alt and granulated sugar. We mix everything very well. The recipe for cooking adjika involves its gradual boiling. Therefore, cook it for an hour, stirring constantly. Next, you need to put the garlic, passed through the press, into the pan and pour the vinegar. After 5 minutes everything is ready. It remains only to pour it into jars and close the lids. When the adjika has cooled down, it can be removed to a cooler place. If you do not know what can be cooked from tomatoes, then use this recipe.
In some versions, they slightly deviate from the classic recipe by adding new ingredients. This gives it a more spicy taste. Adjika with horseradish is prepared as follows. It will take two kilograms of tomatoes, one kilogram of bell pepper (preferably red), 300 grams of horseradish and the same amount of garlic and hot pepper, two thirds of a glass of vinegar 9%. Add s alt to taste.
To make adjika with horseradish more homogeneous, I will remove the skin from the tomatoes. To do this, they must be cut crosswise and dipped in boiling water for 2 minutes. After that, we shift the tomatoes into cold water. As a result of this procedure, it will be possible to easily remove the peel from them. Cut the tomatoes into 4 pieces. In peppers of two types, we remove the seeds and the stalk. It must be washed well and cut into pieces.
Now we grind the vegetables with a blender or with a meat grinder. The more uniform the consistency, the better. Horseradish root must be peeled and gratedon a grater. If adjika with horseradish will be consumed immediately, then you can simply mix all the prepared ingredients, add the garlic passed through the press to them, and serve. To prepare for the winter, boil the tomato with vegetables, then add horseradish, garlic and spices. After five minutes of cooking, it will be ready. Pour adjika into jars and leave to cool. Then we remove the containers to a place with a lower temperature.
It should be noted that real adjika, which is made in Georgia, does not include tomatoes. She is very sharp and spicy. So choose the recipe of your choice.
