- 350 g grated carrots.
- 100 g cottage cheese.
- 120g almond flour.
- 120 g cane sugar.
- 100gplain wheat flour.
- 70 g good butter.
- 4 eggs.
- 1 tsp baking powder.
- Orange peel.
This carrot-curd cake is prepared in several stages. In a deep container, combine eggs and chopped orange zest. All this is supplemented with grated carrots, mashed cottage cheese and melted butter, and then whipped. The resulting mass is mixed with bulk ingredients and transferred to a greased high form. Bake the product at 175 0C within an hour.
With semolina
This delicious and satisfying enough carrot-curd cake will be a great addition to your morning tea. To bake it you will need:
- 250 ml of kefir of any fat content.
- 500 g cottage cheese.
- 1 cup of cane sugar.
- 1 half glass of semolina.
- 4 eggs.
- 4 juicy carrots.
- Vanillin.
You need to start preparing the dough, which will become the basis for the future carrot-curd pie, with the processing of semolina. It is poured into a bulky bowl, poured with kefir and left for a little less than half an hour. At the next stage, the swollen mass is combined with grated carrots and cottage cheese, mashed with eggs and sugar. All this is flavored with vanillin, whipped with a mixer and poured into a high refractory form. The product is baked at 180-190 0C until ready, which is easy to check with a regular toothpick.

This delicate carrot cake with cottage cheese cream will be a great alternative to store-bought cakes. To bake it especially for a family holiday, you will have to stock up:
- 100 ml fat-free yogurt.
- 200 g carrots.
- 1 egg.
- ½ lemon (juice and zest).
- ½ tsp soda.
- 50 g each of oatmeal and whole grain flour.
- Vanillin, cinnamon and any sweetener.
To make the cream, you will have to buy extra:
- 100 ml natural unflavoured yoghurt.
- 100 g fat-free cottage cheese.
- Any sweetener, vanillin and peanuts.
Washed carrots are baked in foil, and then mashed and combined with egg and kefir. All remaining components are introduced into the resulting mass, including soda diluted with a small amount of boiling water. The dough prepared in this way is poured into a high refractory mold and baked at 180 0C for 40-50 minutes. After the indicated time has elapsed, the toasted cake is completely cooled, cut and smeared with a cream consisting of yogurt, cottage cheese, sweetener and vanillin. The top of the product is sprinkled with crushed peanuts.
With oatmeal
This carrot-curd cake is interesting because it does not contain a single gram of ordinary flour. Its role is assigned to more useful oatmeal, which gives the finished product an indescribable taste. To verify this from personal experience, you will need:
- 100 mlyogurt.
- 200 g cottage cheese.
- 200g raw carrots.
- 150g oatmeal.
- 50g nuts.
- 2 eggs.
- 4 tbsp. l. cane sugar.
- 1 tsp powdered cinnamon.
- ½ tsp soda.
Peeled, washed and grated carrots are combined with ground oatmeal, sugar and cinnamon. All this is supplemented with soda, eggs, cottage cheese and kefir, and then thoroughly stirred, not forgetting to add crushed nuts, and poured into a tall form. Bake the cake at 175 0C for 40-50 minutes.
