  • 350 g grated carrots.
  • 100 g cottage cheese.
  • 120g almond flour.
  • 120 g cane sugar.
  • 100gplain wheat flour.
  • 70 g good butter.
  • 4 eggs.
  • 1 tsp baking powder.
  • Orange peel.

This carrot-curd cake is prepared in several stages. In a deep container, combine eggs and chopped orange zest. All this is supplemented with grated carrots, mashed cottage cheese and melted butter, and then whipped. The resulting mass is mixed with bulk ingredients and transferred to a greased high form. Washed carrots are baked in foil, and then mashed and combined with egg and kefir. All remaining components are introduced into the resulting mass, including soda diluted with a small amount of boiling water. The dough prepared in this way is poured into a high refractory mold and baked at 180 0C for 40-50 minutes. After the indicated time has elapsed, the toasted cake is completely cooled, cut and smeared with a cream consisting of yogurt, cottage cheese, sweetener and vanillin. The top of the product is sprinkled with crushed peanuts.

  • 50g nuts.
  • 2 eggs.
  • 4 tbsp. l. cane sugar.
  • 1 tsp powdered cinnamon.
  • ½ tsp soda.

Peeled, washed and grated carrots are combined with ground oatmeal, sugar and cinnamon. All this is supplemented with soda, eggs, cottage cheese and kefir, and then thoroughly stirred, not forgetting to add crushed nuts, and poured into a tall form. Bake the cake at 175 0C for 40-50 minutes.
