Meanwhile, exhausted by the heat and hunger, a rich merchant was driving along the road near the spring. His nose smelled the pleasant aroma of broth, meat and vegetables, his stomach cramped with hunger, he stopped and went to the pleasant smell. Seeing the travelers resting by the stream and the frying pan, he understood where the smell came from and asked for some for himself to satisfy his hunger. Travelers fed the merchant.
The merchant liked the incredible taste of the new dish so much, he was so satisfied with a small portion so quickly that he offered any money for the recipe of this brew. Travelers shared the recipe with him, and he, in turn, began to sell the recipe to culinary specialists, began to build various establishments that sold a hitherto unseen recipe. Lagman - oriental dish
The name of the dish - "lagman" - is traditionally translated as "stretched dough", because to prepare thisdishes used homemade noodles. The latter is significantly different in taste from the store. And how would a noodle be without a rich sauce?
Each family uses different products to prepare lagman, especially the favorite combination of vegetables and meat. Traditionally, a delicious beef lagman is prepared, lamb is also often used, we will also share a pork recipe, this is one of the frequent ingredients of Russian tables.
Each family has its own special ingredient, a special recipe that passes from one generation to another, changing and improving, but what unites any variation of the dish, like travelers, is that lagman is prepared from homemade noodles in a wok or a cauldron.
Let's start the recipe with the main ingredient - noodles.
Noodles for lagman
To prepare delicious, homemade noodles for the most delicious lagman, we need extremely simple, affordable ingredients:
- flour - 1 kg;
- eggs - 2 pcs.;
- warm water - 400 ml;
- s alt - 1.5 tbsp. l.;
- soda - 1/2 tsp;
- vegetable oil - 1 cup.
Let's start cooking noodles.

To prepare the noodles you will need a deep bowl. Pour warm water into it, one tablespoon of s alt and mix the ingredients thoroughly. Crack the eggs into a bowl and stir everything together with a whisk. When the ingredients are thoroughly mixed, gradually add the flour and knead the dough.
Next, take a clean towel, moisten with cold water and wrap the finished dough in it. Leave it like this for 1 hour. It is possible and more. During this time, you need to take out the dough several times and knead it.
In a bowl, pour 1/2 cup of water and pour the remaining s alt and soda, mix everything thoroughly. This solution must be gradually rubbed into the dough so that the dough becomes soft, smooth, elastic. Wet your hands when stretching the noodles in this solution.
Pull the dough into a bundle and cut into a few pieces, put on a dish, curled up with a snake. Brush the noodles with vegetable oil, cover with a towel and let sit for 10 minutes.

- beef broth - 1000 ml;
- potatoes - 1 pc.;

- carrot - 1 pc.;
- sweet pepper - 1 pc.;
- radish - 1 pc.;
- garlic - 3 cloves;
- tomato paste - 2 tbsp. l.;
- sunflower oil - 3 tbsp. l.;
- fresh parsley and dill - 2 branches each;
- spice for lamb.
Cooking
Take fresh meat and cut into medium pieces. Lubricate a cauldron or a deep frying pan - a wok - and lay out the pieces of lamb. Fry the meat until golden brown. While the meat is cooking, process the vegetables. Wash and peel potatoes and cut into small cubes. Cut the pepper and carrot into short strips, and the tomato and radish into cubes. Chop the onion into small cubes.
Put the onion, radish and pepper to the finished meat. Mix the ingredients thoroughly and after a few minutes add the tomato.
