Cooking cakes
Preparing the Papyrus cake according to the recipe begins with the fact that the flour is carefully sifted into a separate container.
Butter must be at room temperature before you start making the cake, so put it on the table an hour before cooking so that it melts and softens. No need to melt the butter in a steam bath or in the microwave, it should be firm but pliable so that it mixes well with other ingredients.
Only 150 g of butter is sent to the flour, the rest goes to the cream. By the way, leave half a cup of flour on the same custard for greasing the cake.
In the same bowl, put sour cream and knead a stiff dough, it should be elastic and resemble dough for dumplings. Divide it into 10-12 parts. Each part must be rolled into a bun, covered with cling film and left for 15–20 minutes.
Spread parchment on the table, sprinkle it with flour, but not much, our dough is already quite hard. Roll each ball into a thin circle.

Custard
