Recipe 1: Fresh fish
For the preparation of fish pancakes, we will use minced white fish, let's take hake. You can also use pollock or any other fish you like. Thus, for pancakes you will need:
- 600g hake;
- 5 tbsp. l. flour;
- 5 tbsp. l. sour cream;
- 2 tbsp. l. decoys;
- 1 egg;
- 1 onion;
- bunch of dill;
- slaked soda, s alt, pepper.

Cooking
Gut the fish, rinse thoroughly under running water, separate the fillet from the bones, skin and fins.
In a meat grinder, grind the hake fillet into minced meat. Put it in a separate bowl.
Add sour cream for the tenderness of pancakes, beat in an egg, s alt and pepper, add your favorite spices for fish. Thoroughly mix the ingredients, gradually introducing the flour.
1\3 tsp quench soda with vinegar and send to minced meat. After mixing all the ingredients until smooth, add semolina. Pour it also gradually, stirring the total mass so that large, dry lumps in pancakes do not form.
Onions must be peeled and chopped. To do this, it is better to use a blender. Chopped with a knife, the onion will still be felt in pieces in fish pancakes. You can also grate the onion directly into the bowl so you don't lose the fragrant juice.
Wash the dill and chop it as finely as possible.
Add the onion and dill to the minced meat, stir and you can start baking.
Spread the pancakes with a spoon on a well-heated, oiled pan. Fry the pancakes on both sides until the characteristic golden crust appears.
Your fish pancakes are ready, choose your garnish and serve with a nice, savory sauce.
Recipe 2: canned food
No less delicious canned fish pancakes come out, they are so tender, juicy and especially fragrant. To prepare them you will need:
- 1can of pink salmon;
- 2-3 eggs;
- 3–4 tbsp. l flour;
- 1 onion;
- bunch of dill, s alt and spices as needed.
You can also use any canned fish like saury. Everything except sprats.
Cooking
Drain the canned liquid, put the fish in a deep bowl and crush large pieces with a fork.
Finely chop the onion and fry in a pan until golden brown, put in a bowl, beat a couple of fresh eggs on top, add finely chopped dill or any other herbs to taste. Mix the ingredients thoroughly. You will get a liquid homogeneous mass.
Add flour to the bowl, gradually kneading the dough. The dough turns out to be loose, relatively liquid, so that it is convenient to take it with a spoon and put it in a pan.
Fire the frying pan and pour plenty of vegetable oil. Spread in hot oil on a spoonful of mass for fish pancakes and bake. The fish bakes very quickly, so keep an eye on your pancakes. Fry the fish pancakes on both sides. If you are going to braise them in the sauce below, fry them until they are barely golden.
Pancakes are soft, juicy, with a pleasant aroma.
Sauce for pancakes
Complete your canned fish pancakes with a delicious, fried sauce. To do this, finely chop the onion and put it in a hot frying pan, generously oiled. Saute the onion until translucent and golden brown.
Carrotgrate on a medium grater and add to the pan. Simmer everything for a few minutes, add a couple of tablespoons of tomato paste or lecho sauce, your favorite herbs, fresh herbs and green onions.
Pour a mug of water into the pan, spread the fish pancakes and simmer over low heat covered for 7-10 minutes.
