Is there anyone who does not like pancakes: so ruddy and delicious. Unlikely. Therefore, every self-respecting housewife knows the pancake recipe by heart. Traditionally they are cooked with milk or water. But there are also a lot of recipes for lush pancakes with whey. And moreover, they are in no way inferior in taste to classic pancakes.
Recipe for fluffy pancakes with whey holes

- half a liter of whey;
- 3 eggs;
- semolina - 100 grams;
- granulated sugar in the amount of 50 grams;
- a pinch of s alt;
- soda slaked with vinegar - 5 grams;
- odorless sunflower oil - 100 ml;
- 300 grams of wheat flour.
And now the cooking process itself:
- First, you need to pour 0.5 l of whey into a glass or ceramic dish and heat it up a little in the microwave.
- Heated whey is poured over the indicated amount of semolina and left for 60 minutes so that the semolina swells properly.
- As soon as an hour has passed, a ready-made mixture of eggs, s alt and sugar is added to the semolina. Everyone stirs.
- Next, sift the flour and mix with the finished liquid mixture. You may need more or less flour, the main thing is that the consistency of the prepared dough resembles boiled semolina.
- Add butter to the dough and mix thoroughly until it no longer appears on the surface.
- And at the end of the preparation of the dough, soda slaked with vinegar or citric acid is added to it and everything is mixed.
- The prepared dough is covered with a lid, and preferably with a towel, and set aside for 25 minutes to infuse at room temperature. As soon as (and this is just after 25 minutes) small bubbles appear on the surface of the dough, you can safely start frying.
- They cook lush pancakes with whey in a frying pan or a special pancake maker. It is heated and smeared with a piece of butter.
- The ladle is filled to the brim with dough and poured into a hot frying pan. A blurry pancake will turn out wide and lush. Fry it on one side until it dries on top. After that, the pancake is turned over with a spatula and fried for another 30 seconds.
Ready-made delicacy can be eaten with various sweet additives: jam, condensed milk, jam, etc.
Luxury whey fritters
Pancakes in a pan are quick and easy to prepare, and the dough recipe is similar to a pancake recipe. In order to serve them for tea, the dough is pre-kneaded. It will require:
- half a liter of whey from cheese or cottage cheese;
- 20g granulated sugar;
- quarter tsp s alt;
- 5 cups of wheat flour;
- a bag of vanillin;

Preparing lush pancakes on whey in several stages:

- After sugar and s alt are poured into the hot whey and mixed until smooth.
- Then, wheat flour is sifted into the whey and everything is thoroughly mixed so that there are no lumps.
- Pour vanilla sugar into the dough and mix again until completely dissolved.
- The final form of the dough should have a thick consistency, that is, it should not spread like a pancake, but fall off the spoon in "pieces".
- And finally add soda. Leave the dough to infuse a little, about 10 minutes. And then they start frying the pancakes.
- The frying pan must be warmed up well, frying on a dish that has not yet been warmed up - this means "translating" the dough and not getting anything in the end. As soon as the pan is hot, pour enough oil into it.
- Use a spoon to spread the pancake dough on the pan. Moreover, after each application, the spoon should be dipped in a container of water.
- Fry each batch of pancakes for 2 minutes (one minute on each side) until golden.
Cooking pancakes in the oven
The usual way of making pancakes is frying in a pan. But fluffy whey pancakes are also cooked in the oven, and it's as natural as regular fried pancakes.
Before the culinary process, it is worth preparing all the necessary ingredients:
- 400 g of flour (but it may actually be a little more or less);
- 500 ml serum;
- 100ml cold drinking water;
- 100 ml boiled water;
- a couple tablespoons of olive oil;
- 3 tbsp sugar;
- 2 eggs.
You will also need to prepare the filling:
- 100 grams brown sugar;
- 33% cream - 100 ml;
- 50 grams of butter;
- juice of one lemon.
And now the cooking itself:
- From the components prepared for the dough, a mixture is prepared, which should not be liquid in consistency, but moderately thick and moderately fluid. Everything is mixed and left to brew for 10 minutes.
- Then fried in a panfluffy pancakes.
- After, each pancake is rolled up and placed in a dish suitable for baking in the oven. Cover with a towel and start cooking the filling mixture.
- Butter is melted in a water bath. Add lemon juice and sugar to it. Everything is mixed without removing from the water bath, and boiled for another 5 minutes.
- Then remove from the stove and immediately carefully pour in the cream, which should be at room temperature.
- Pour prepared sauce over pancakes placed in a baking dish and place in the oven preheated to 180°C. After 10 minutes, the dish will be completely ready to eat.
If there are no eggs for the test
Usually they cook fluffy pancakes on whey with an egg. But the absence of the last component is not a reason to refuse to cook this dish. You will need:
- 0.5L whey fluid;
- 400 g flour;
- 2 tbsp. l. sugar;
- a little s alt;
- a teaspoon of baking soda slaked with vinegar;
- 20 ml sunflower or olive oil.
Steps of the cooking process:
- The flour is sifted and bulk ingredients are added to it - flour and s alt.
- All half a liter of whey is heated and half of the liquid is poured into the flour.
- Everything is stirred. And then pour the remaining half of the whey and mix again.
- Pour oil, slaked soda into the dough and mix everything again until smooth.
- The dough is ready. It can be set aside for 10 minutes to brew. And you can immediately start fryingpancakes.

Pancakes without soda
Not everyone prefers baking soda. Therefore, pancakes can be baked without it. Required:
- 0.6 L of dairy product whey;
- 0, 1 kg of sugar;
- 3 eggs;
- 310 g wheat flour, or special pancake flour;
- 50ml sunflower oil;
- 5g edible s alt.
Whey the serum. Eggs are mixed with s alt and sugar. Combine the whey with the egg mixture, then add the flour. Finally, oils are added.
Bake pancakes for a minute - one and a half on each side over low heat.

- 300ml whey fluid;
- 2 eggs;
- 3 tbsp. l. sugar;
- 300 grams of flour;
- baking powder - 2 tsp;
- a third of a teaspoon of soda;
- a bag of vanillin;
- half tsp s alt;
- a couple tablespoons of cocoa;
- 2 tbsp. l. sunflower oil.
And chocolate thick pancakes are prepared like this:
- First: combine the sifted flour, baking powder, soda and s alt.
- Second: sugar is mixed with vanilla.
