The bruise mushroom, quite rare for our forests, is difficult to confuse with any other species. Its hat can reach a diameter of twelve centimeters and have both a spherical shape and a pillow-shaped one. It feels like felt to the touch. The pulp of the mushroom has a crumbly structure and is white in color, but when cut, it instantly acquires a bluish tint, for which the mushroom got its name. The cap and leg of the bruise are painted in an intense yellow-straw color. The stem of the mushroom is hollow and wide.
Mushrooms of this species mainly grow in forests on sandy soil. You can meet them under birches, as well as under chestnuts and oaks. In most of Russia, these mushrooms are very rare, they are listed in the Red Book. Bruise season starts in July and ends in September.
As a rule, an inexperienced mushroom picker can confuse a bruise with a chestnut hygropore, which is very similar in appearance. You can easily determine the difference by making an incision on the plant: if it immediately acquires a blue tint, then you have a bruise in front of you. If it remains yellowish-white, then it is most likely a hygropore.

This dish is very tasty and easy to prepare. As ingredients, we need three hundred grams of mushrooms, onions - two heads, vegetable oil, garlic, pepper and s alt to taste. The onion is cut into small cubes and fried in oil until golden brown. Mushrooms are finely chopped and added to the onion, this mass must be stewed for 7-10 minutes.
Crushed garlic, pepper and s alt are added to the onions and mushrooms a couple of minutes before they are ready. Delicious mushroom caviar is ready!
Recipe for fried bruise mushrooms with nuts
To prepare this dish you will need a pound of fresh mushrooms, a glass of peeled walnuts, two onions, a few green onion feathers, 80 grams of butter, cilantro, parsley, apple cider vinegar, ground pepper and s alt to taste. Washed and peeled mushrooms must be cut into slices, add s alt and fry together with finely chopped onions. During frying, the mushrooms will secrete juice, which must be drained and a little apple cider vinegar and pepper added to it. The resulting mixture must be pouredfried mushrooms, add finely chopped parsley, cilantro and onion, as well as chopped walnuts. Mix everything well and let cool. When serving, lay the mushrooms in a slide and decorate the dish with sprigs of greens. Of course, you can fry bruises without adding various spices, herbs and nuts, but this dish will not have such a memorable and unique taste.
