Ingredients for cooking:

  • 150g sifted white flour;
  • 100g sugar;
  • 50ml milk;
  • 2 eggs;
  • 50g butter;
  • 50g chocolate (preferably dark);
  • vanillin - on the tip of a knife;
  • 1 tsp baking powder for dough (you can use soda - you have to quench with vinegar).

The peculiarity of making chocolate muffins (yes, and any muffins in general) is the fact that you first need to mix all the dry ingredients, then the liquid ones, then combine both components, and pour the finished dough into molds.

Mix sugar, flour, baking powder and vanilla. As some recipes say, powdered sugar can be used instead of sugar, and after mixing the dry component of the muffins, it is recommended to sift the mixture through a rare sieve again. But, as practice shows, chocolate muffins turn out great even without additional sifting.

Melt on waterbath (or microwave) butter and chocolate, mix with eggs and milk. Then we combine wet and dry products and pour the mixture into baking containers. Muffins are baked at a temperature of 200 degrees for about 20 minutes.

We take melted butter (at room temperature it melts for about 2 hours),cut it into small pieces and add to the dough. Thanks to the softened butter, the dough will acquire the desired uniformity. To do this, you also need to beat the butter with a mixer and stir it with the dough base. By the way, milk fat will add extra softness to your pastries. We beat again all the products. Pour in the sifted flour and add the baking powder. Next, we take a spoon to make a dough of medium density. The final touch is adding cocoa and raisins. The more raisins, the better. To get a completely liquid middle, the chocolate is broken and put into a tight plastic bag, cream is added and melted in a water bath without boiling.
