Duck in the oven with apples and oranges: ingredients
To prepare this festively delicious dish, you will need the following ingredients:
- duck carcass - 2-2, 5 kg;
- 2 apples;
- 1 orange;
- s alt - to taste;
- black pepper - 1 tsp
It is advisable to take a bird at home, medium size withthin layer of fat. If the duck was frozen, then it must be transferred from the freezer to the bottom shelf of the refrigerator in advance at least 14 hours before cooking. Apples in the recipe are used sour or sweet and sour varieties.
Before baking, thawed duck must be marinated. For the marinade you will need:
- soy sauce - 100 ml;
- orange juice - 120 ml;
- garlic - 3 cloves;
- spicy mustard - 1 tsp
- Italian herbs - 1 tsp;
- hops-suneli - ½ tsp.
Orange juice should be exclusively natural. To squeeze it, one large orange will be enough. Packaged juice from the store will not work in this case.
To make the meat soft, bake the duck in the oven (with oranges and apples as a filling) in the sleeve.
Preparing marinade for poultry
Before you start marinating, the duck should be washed well in cold water, and also cut off the neck and sebaceous glands from the tail. You can also remove the extreme composition at the wing. Use tweezers to remove dark and coarse villi on the skin. Now the duck needs to be doused twice with boiling water, after which it is dried inside and out with a paper towel. So, the bird is ready for pickling.
You need to do this in the following order:
- Grate the duck well with s alt and black pepper, inside and out.
- For the marinade, combine orange juice and classic soy sauce together. Shuffle.
- Take a 10cc syringe with a needle. Dial the marinade into it and chop the duck from all sides, every 2 cm. This is done so that the bird is marinated not only outside, but also inside.
- Add squeezed garlic, spices, mustard to the remaining marinade. Mix well and rub it on the skin and inside of the bird.
- Wrap the duck in cling film, tighten tightly so that the marinade does not leak out. Send the bird to the refrigerator for at least 6 hours, preferably overnight.
Duck stuffing
Now we need to deal with fruit. This should be done immediately before sending the duck to the oven. Wash oranges and apples and cut directly with peel into 4-6 pieces.
Get the duck out of the refrigerator, remove the cling film. In the hole in the lower part of the carcass, place the filling from pieces of apples and oranges. Prick it with toothpicks. Now the duck should be put in the roasting sleeve and be sure to fix its free edges with clips. From above, make several punctures with a needle to release steam. The stuffed carcass in the sleeve must be transferred to a baking sheet of a suitable size.

Immediately before sending the duck with apples and oranges to the oven, the temperature should be set to 180 ° C. Thus, the oven must be preheated in advance. The baking sheet with the bird must be placed on the middle level.

Remove the finished duck from the oven, remove the toothpicks and transfer to a beautiful dish. When serving, serve orange sauce with the bird. You can prepare it while the duck is roasting in the oven.
Orange sauce
Oven baked duck with apples, according to the recipe, served with spicy sweet and sour sauce. It is prepared as follows:
- Heat butter (10 g) and olive oil (1 tbsp) in a frying pan.
- Chop a small onion as small as possible.
- Fry the onion in a mixture of oils until soft.
- Squeeze juice from oranges. In total, you will need 150 ml for the sauce.
- Pour 50 ml of white wine into a pan with a transparent onion. Simmer the sauce over low heat until the wine has evaporated.
- Pour in 60 ml of chicken broth, 15 ml of table vinegar.
- Add 1 tbsp. l. honey, a pinch of s alt and black pepper. Continue to cook the sauce until the liquid has evaporated. This will take approximately 5 minutes.
- Flour (½ tbsp.) Combine with a little water. Mix well so that there are no lumps. Pour the resulting mixture into the pan.
- Cook the sauce for 1 more minute. Atserving the duck to the table, pour it over the bird.

- The bird can be baked not only in the sleeve, but also in foil. To do this, the duck marinated and stuffed with fruit must be wrapped in 3 layers of foil, then put on a baking sheet and sent to a preheated oven. After 2 hours, the bird must be unrolled so that it is browned on top.
