  • Cottage cheese - 800 gr.
  • Cream - 100 ml.
  • Vanilla sugar - 10 gr.
  • Cherry syrup - 80 ml (impregnation).

Honey cake:

  • Eggs - 3 pcs
  • Butter - 50g
  • Sugar - 600g
  • Liquid honey - 150 ml.
  • Soda - 1 tsp
  • Flour - 500g
  • Sour cream - 500g

Cookies should be placed in a bowl and thoroughly broken. Add about 100 ml of milk and wait for the cookies to soften. Next, mix everything togethermass. Melt butter and add to batter, mix well. Now take the form (you can use some kind of bowl), cover the inside with cling film and put half the mass there. Flatten and refrigerate for half an hour.

In a saucepan, bring 800 ml of milk to a boil, add kefir and cook for another 10-15 minutes until the whey separates. Strain the mass, wait until all the whey comes down and stir, you get a tender curd. Mash banana and mix with cottage cheese.

Remove the form from the refrigerator and put the cottage cheese and the rest of the dough there, remove it again. After an hour and a half, you can take out the form, take out the cake from there and decorate.

Curd Sponge Cake

Get all ingredients out. The oil must be heated to room temperature, and the eggs should be divided into proteins and yolks. Beat the whites, then add sugar (about 120 g) and continue to beat until stable peaks. Add sugar (30 g) to the yolks and beat until white. Then combine the yolks with 1/3 of the whites and mix. While the biscuit is baking, rub the cottage cheese through a sieve, add sugar (200 g) and beat until smooth. Separately, whip the cream with vanilla sugar into an air mass and add to the curd, mix everything thoroughly and put it in the refrigerator.

Cut the biscuit into three cakes, soak them with syrup. Next, you need to put in layers: cake-cream-cake-cream-cake. Now it can be topped with icing or ganache (cream of chocolate and cream) and refrigerate for 2 hours. After this time, it can be decorated and served.

Honey cake

In a bowl / saucepan, mix eggs with sugar (300 g) and beat until foamy. Add butter at room temperature, honey and soda to the mass. Place the bowl/saucepan in a water bath (for example, on another saucepan filled with boiling water) and stir the mass for 10-15 minutes. It should double in size and become airy. Add 1 tbsp. a spoonful of flour and stir until the lumps are completely dissolved. Remove the saucepan from the heat and let the mixture cool down. When it becomes warm/cold, add the remaining flour and knead the dough. It should be soft and plastic. The dough should be divided into 6-8 pieces (1 piece per 1 cake) and put in the refrigerator for half an hour.

Then roll each piece into a thin crust, put on a baking sheet and bake for 5 minutes at 180 degrees. Carefully cut the cakes and cool, the trimmings can be crumbled for decoration.

Beat sour cream and sugar (300 gr) with a mixer until sugar is not felt. Assemble the cake in the order cake-cream-cake …. From above, you can sprinkle the honey cake with crumbs from the scraps of the cakes.

The cake should be put in the room for about 2 hours so that the cream soaks the cakes, and then put in the refrigerator for 7-8 hours. It is recommended to leave it there overnight.
