How to cook

  1. Preheat oven to 180°C.
  2. Line the bottom of the mold with baking paper.
  3. Chop flour and butter until buttery crumbs form.
  4. Sugar, vanilla sugar, soda (quench with vinegar) and add the yolk to the crumbs. Grind again, not trying to form a whole piece of dough.
  5. Place the crumble in the refrigerator for an hour.
  6. For the filling, mix the cottage cheese with sugar, vanilla sugar, egg yolk and egg until smooth.
  7. Add soft butter, starch semolina and soda while beating.
  8. Mix the jam with cherries (if the berry is frozen, thaw it first and drain the juice).
  9. Pour half of the sand crumb into the mold, not tamping it too much.
  10. Above the dough - a mixture of berries and jam.
  11. Cover the cherries with an even layer of curd mixture.
  12. Sprinkle the remaining dough crumbs on top.
  13. Place the pie in the oven and bake for half an hour until the dough is evenly golden.
  14. Take out the cake and let it cool for 40 minutes in the form.

Cooking

This cherry and cottage cheese pie has a very interesting base: it is yeasty, but it has all the qualities of shortcrust pastry.

  1. To prepare the dough, heat the milk until warm, add a little sugar from the total amount and yeast. Let stand for 5 minutes. A tangible cap will grow over the milk.
  2. Add the remaining sugar, s alt, egg yolk, vanilla sugar, butter and flour to the yeast mixture. The dough will be softsticking to hands. That's the way it should be. Place it in a bowl, covered with a towel, and leave to rise for an hour.
  3. This shortbread pie with cherries and cottage cheese does not tolerate an overly moist filling. Therefore, if you use a frozen berry, then you must defrost it in advance and drain the juice.
  4. For the filling, separate the egg white from the yolk.
  5. Mix egg yolks (reserved and as per recipe) with mascarpone, vanilla sugar, cottage cheese, 75 grams of sugar and starch.
  6. Beat the protein with a pinch of s alt and the remaining sugar until strong peaks and fold into the curd mass.
  7. Divide the filling into 2 parts - 1/3 and 2/3.
  8. Stir cherries into the larger portion, cocoa into the smaller portion. The cottage cheese and cherry pie (photo below) will only get richer with a subtle hint of chocolate, so we recommend that you do not skip this step.
  9. Line the bottom of the pan with parchment paper and spread evenly over the top of the dough, forming rims.
  10. Put the chocolate filling on the base, and cherry filling on top of it.

The dough that we will offer you in this recipe is not easy. It is mixed with potato broth. It may seem strange, but potatoes work wonders with the dough: it turns out to be especially soft andair. Well, curd-cherry stuffing is always good:

Dough:

  • potato broth - 125 grams;
  • dry yeast - 3 grams;
  • granulated sugar - 30 grams;
  • vanillin - 1 pack;
  • s alt - 0.25 tsp;
  • sour cream - 1 tbsp. spoon;
  • refined oil - 30 grams;
  • flour - 230 grams (maybe a little more, be guided by the consistency).

Filling:

  • soft pasty cottage cheese - 250 grams;
  • egg - 1 piece;
  • yolk - 1 piece;
  • orange zest - 1 teaspoon;
  • granulated sugar - 50 grams;
  • vanilla sugar - 1 pack;
  • corn starch - 25 grams;
  • cherry (so that the pie with cherries and cottage cheese is not sticky, it is better to drain the juice) - 300 grams.

Step by step

Products are listed on a 22cm round tin. Start with the dough.

  1. Heat the broth to warm, dissolve the yeast in it.
  2. Stir in s alt, regular and vanilla sugar, sour cream. Blend until smooth.
  3. Steep the flour and knead the dough.
  4. Last add butter, knead again. The dough will turn out tender, elastic and silky.
  5. Put it in a bowl, cover and let rise in a warm place for 1-1.5 hours.
  6. For the curd filling, mix all the products, except for the berries, until a homogeneous mass is obtained. As soon as the dough for the pie with cottage cheese and cherries rises, turn on the oven at 180 ° C - let it heat up.
  7. Bottomline the molds with baking paper.
  8. Knead the dough and roll into a circle with a diameter of 28 cm.

Dough:

  • butter good quality - 200 grams;
  • vinegar 6% - 0.5 tsp;
  • cold water - 250 ml;
  • s alt - a pinch.

Spicy Berries:

  • cherries - 200 grams;
  • red wine - 120 grams;
  • cinnamon - 1 stick;
  • zest from 1 orange;
  • zest from 1 lemon;
  • orange juice - 3 tbsp. spoons;
  • allspice - 2 pcs

Curd filling:

  • sour cream - 90 grams;
  • homogeneous cottage cheese - 250 grams;
  • granulated sugar - 80 grams;
  • egg - 1 piece;
  • vanilla sugar - 1 pack.

Cooking

First of all, take care of the cherry. Mix all ingredients for the spicy berries, bring to a boil and leave overnight.

The most difficult thing here is the dough for spicypie with cherries and cottage cheese. This recipe is suitable for those who have free time.

  1. Take the butter out of the refrigerator.
  2. Mix water, vinegar and s alt. Gradually adding flour, knead the dough. One should become pleasant, smooth and elastic. Roll out into a cross shape. This is necessary so that the oil is hermetically "packed".
  3. Cut a pack of butter lengthwise into 2 slices, put in the center of the dough layer.
  4. Cover the butter with dough, first from the sides, then from above and below. It turned out to be a kind of envelope.

  6. Roll out the workpiece without pressing hard on the rolling pin. The length of the dough with butter will increase three times.

  11. The dough is ready. Divide it into 2 parts - 2/3 and 1/3.
  12. Prepare a 2020 cm mold.
  13. Preheat the oven to 200-210°C.
  14. Roll out most of the dough and put it into a mold, forming sides.
  15. Put the berries on a sieve.
  16. For the curd filling, mix all ingredients until smooth. Lay on top of the dough.
  17. Spread berries over the filling.
  18. Roll out the remaining third of the dough, cut into strips and lay a wire rack on the pie.
  19. Bake until deep brown (about half an hour).

Servechilled dessert.
