- 50 g steamed raisins.
- 2 eggs.
- 12g yeast (pressed).
- 400 g fine flour (wheat).
- Orange.
- S alt.
These yeast dough buns are prepared so simply that any beginner can easily cope with such a task. You need to start this process by creating a sponge. To obtain it, in a deep container, shiver, warmed milk, a couple of tablespoons of flour and a fourth ofavailable sweet sand. All this is briefly removed in a warm place, and then supplemented with melted butter, beaten egg, a pinch of s alt and another 75 g of sugar. All this is thoroughly mixed with flour and left to approach. After a couple of hours, a layer is rolled out of the risen dough and circles are cut out. Each of them is filled with cottage cheese, mashed with crushed orange peel, the remains of sweet sand and steamed raisins, and rolled into a ball. Ready-made buns are laid out on a baking sheet, coated with a beaten egg and subjected to heat treatment. Bake them for about 20 minutes at 180 ° C.
With sour cream
These sweet products are baked on the basis of yeast dough, kneaded in sponge method. They are very fluffy and do not lose their original softness for a long time. To make these delicious raisin buns you will need:
- ½ art. l. yeast (quick acting).
- 1 tbsp l. high-grade flour (wheat).
- 1 tbsp l. sugar (finely crystalline).
- ½ glass of milk.
All of the above ingredients will be needed to get the dough. To complete the process of making the dough for raisin buns, you will need:
- 100g butter (melted).
- 2 cups whole milk.
- 3 tbsp. l. any vegetable oil (no flavor).
- 1, 5 cups sugar (fine crystalline).
- 1 kg fine flour (wheat).
- 2 selected chicken eggs.
- ½ cup sour cream.
- 4 handfuls of raisins.
First you need to do the dough. Yeast, sugar and flour are dissolved in the right amount of warmed milk. All this is kept in a warm place until a significant increase in volume. After a short time, the risen dough is poured into a container in which there is already heated milk, beaten eggs, granulated sugar, sour cream, vegetable and melted butter. All this is kneaded very carefully, gradually adding oxygen-enriched flour and raisins. After a couple of hours, neat buns are formed from the risen dough and baked for 15 minutes at 200 ° C.
With cognac and vanilla
The basis for the preparation of these sweet buns will be yeast-free dough. To knead it you will need:
- 0.5kg high-grade flour (whole grain).
- 300 ml yogurt (full).
- 5 tbsp. l. fine cane sugar.
- 70 g quality butter (soft).
- 2 tbsp. l. good cognac.
- Vanillin, soda, raisins and s alt.
The process of making such sweet buns does not take much time. To begin with, sifted flour, softened butter, cognac, quick soda, s alt, sugar and yogurt are combined in a deep bowl. All this is supplemented with pre-steamed raisins and mixed thoroughly. Neat buns are formed from the resulting dough, laid out on parchment and baked for about 25 minutes at 180 ° C.
With poppy seeds
According to the method described below, very soft richmilk buns. They have a pleasant taste and a light citrus aroma. To prepare them you will need:
- 350 g fine flour (wheat).
- 60g butter (softened).
- 70g sugar.
- 3 selected chicken eggs.
- 1 tsp yeast (quick acting).

- S alt, vanilla and lemon zest.

Five minutes later, melted but not hot butter, citrus zest, a couple of eggs, s alt, the remaining sweet sand and vanillin are added to the resulting solution. All this is mixed with oxygenated flour and wait until it rises. After a short time, neat buns are formed from the dough that has increased in volume, brushed with beaten egg yolk, sprinkled with poppy seeds and baked for 35 minutes at 180 °C.
With kefir
Fun yeast dough buns, baked according to the recipe described below, will be a great addition to evening gatherings with a cup of aromatic tea. To prepare them you will need:
- ½ glass of milk.
- 15 g yeast (pressed).
- 1 tsp cane sugar (finely crystalline).
- 3 tbsp. l. high-grade flour (wheat).
All these components are part of the dough. For the final kneading of the dough, from which sweet fluffy buns will be formed, you will need:
- A glass of kefir (any fat content).
- 2 selected chicken eggs.
- 2/3 cup sugar.
- ~4 cups flour (wheat).
- ½ packs of soft butter.
- S alt.
Yeast is ground with sugar, supplemented with flour and poured with slightly warmed milk. After some time, beaten eggs, sweet sand, s alt, kefir and melted but not hot butter are added to the risen dough. At the final stage, all this is mixed with oxygen-enriched flour and cleaned in heat. As soon as the dough has increased in volume, buns are formed from it and baked until a delicious golden crust appears.
With rye flour
These savory buns have an interesting taste and beautiful color. To bake them you will need:
- 0.5 kg flour (rye).
- 1.5 cups whole milk.
- 0, 4 kg flour (wheat).
- 2 raw eggs.
- 6 art. l. soft butter.
- 10 g yeast (quick acting).
- 2 tsp s alt.
Yeast and rye flour are diluted in slightly warmed milk. The resulting solution is briefly placed in heat. After some time, the risen dough is supplemented with eggs, soft butter, s alt and wheat flour. Everything is thoroughly kneaded by hand and left to approach. After about an hour, identical buns are formed from the dough that has increased in size and baked at medium temperature untillight browning.
With nuts
According to the technology discussed below, very fragrant buns are obtained from yeast puff pastry. To prepare them you will need:
- 1, 2 kg flour (wheat).
- 150 g fine sugar.
- 500 ml whole cow's milk.
- 5 eggs (3 for batter, others for greasing).
- 60g yeast.
- 500g butter (350g for dough, rest for greasing).
- Nuts, s alt and powdered sugar.
Yeast is dissolved in half of the available warmed milk. Sweet sand and part of the sifted flour are also poured there. After some time, pre-beaten eggs, s alt and milk residues are added to the dough. All this is mixed with oxygen-enriched flour and cleaned in heat. The risen mass is rolled out in a layer, smeared with oil, folded into an envelope and briefly sent to the refrigerator. This procedure is repeated three more times and only after that they begin to form buns. The resulting products are left for proofing, smeared with beaten eggs and butter, and then sprinkled with nuts and subjected to heat treatment. Bake buns in the oven, preheated to a moderate temperature. Browned products are decorated with sweet powder.

These delicious and fluffy rolls will be appreciated even by the pickiest eaters. To bake them you will need:
- Glass of milk (pasteurized).
- 35g yeast (pressed).

- 2 raw egg yolks.

- S alt and vegetable oil.
To make the fill, you will have to additionally prepare:
- 100 ml cream (full).
- 2 tbsp. l. sugar.
- ¼ packs of butter.
- Vanillin.
First of all, you should do the dough. For its preparation, yeast, s alt, sugar and a spoonful of flour are diluted in 100 ml of slightly heated milk. All this is cleaned in heat for fifteen minutes. After the specified time, egg yolks and the remaining milk are added to the foamy dough. At the next stage, the future dough is mixed with pre-sifted flour and left to rise. After about an hour, small pieces are plucked from it and given the desired shape. The resulting products are transferred to a greased baking sheet and removed for proofing. Then they are placed in a preheated oven. After fifteen minutes, the future buns are poured with a mixture of heavy cream, sugar, melted butter and vanilla and quickly returned to the oven. The readiness of products can be judged by the presence of an appetizing crust.
