For gardeners year after year, as they say. Due to weather conditions, the yield of fruits harvested from the site can sometimes be minimal. In other years, the problem manifests itself in its opposite - the volume of raw materials for processing is large. The same can apply to grapes. After all, it happens that the mash is already “playing”, and the vine is still strewn with poured clusters. What to do in case of harvesting a rich harvest of juicy berries? Prepare grape juice at home in the form of a canned product for the winter. This article offers recipes based on different processing methods. Choose the most suitable for you.
The first method, how to make grape juice at home
The most affordable way to get a drink would be to use a juicer. Remove the berries from the brushes, wash thoroughly and start pouring into the device. Since there are seeds in the berries, the process will be quite problematic. Periodically clean the juicer from the waste mass. Pour the resulting tart liquid into a saucepan through cheesecloth. If you want to prepare grape juice at home for the winter, completely ready for consumption later, you need to add additional ingredients. This will have to be done due to the fact that in the process of passing the berries, the seeds are slightly damaged, and the juice acquires a specific tart and astringent taste. The same “shade” will turn out if you use a meat grinder. This is especially often the case when not table grapes, but "wild" varieties are used as raw materials. Dilute the juice with water in a ratio of 2:1. Add sugar to the resulting liquid at the rate of fifty grams per liter. Put the container on the fire and boil for fifteen to twenty minutes. Then pour into sterile jars and roll up. Before drinking, the drink should be shaken slightly, as the thick part will precipitate.
Second method, how to make grape juice at home
To avoid the excessive aroma of the seeds during canning, you can squeeze the berries manually. How to squeeze juice from grapes without using a juicer? Prepare the berries by removing them from the brushes and washing. After the water drains, crush them with your hands or with a press. Pour the juice strained through several layers of ordinary gauze into a saucepan. Put the remaining "pulp" in another. Pour the grape mass with water in the proportion of 1 liter per 1 kg and put on fire. Let the mixture boil for ten minutes, and then wait for it to cool. Combine the filtered liquid with juice and sugar a little to taste (about half a glass per two liters).
Then pour the drink into jars and set to sterilize. The time required for hot processing: liter containers - twenty to twenty-five minutes, one and a half liter containers - thirty to forty minutes. Roll up hot jars with lids and wrap them upside down.
How to make juice from grapes with a juicer?
This method is the most practical and does not require additional processing of berries. In addition, the resulting drink does not need to be diluted with water, sweetened to taste, and then boiled and sterilized. Pour ready-made hot juice into jars and close tightly with lids.
