Chicken soup with mushrooms and noodles in Polish is prepared quickly, simply and turns out to be excellently tasty and rich. To prepare it, you will need the following ingredients:
- 500g mushrooms;
- 600 g chicken meat (you can fillet);
- small caliber vermicelli - 2 or 3 tbsp. l.;
- large carrot - 1 pc.;
- two good onions;
- tomato paste - 6 tbsp. l. or 2-3 fresh tomatoes;
- s alt - to taste;
- ground black pepper, bay leaf;
- favorite greens - parsley, dill, etc.
Polish chicken soup with mushrooms
Let's start with chicken meat. Rinse well and place in a bowl of cold water. Put on fire and bring to a boil. Remove the foam, cook for 45 minutes, adding bay leaf, s alt, pepper. If the chicken is not homemade, we recommend using the second broth for the soup, and draining the first one after boiling.
While the chicken is simmering over low heat, let's take care of the vegetables. We clean and wash the onions and carrots. Chop the vegetables into cubes. Mushrooms inspect, sort outand wash thoroughly. We cut them into not too thin plates.
Attention! If you plan to use dried mushrooms, you must first soak them in cold water to swell.
In a separate frying pan, fry onions and carrots in a small amount of vegetable (or butter) oil. Add tomato paste or fresh tomatoes, previously peeled and grated, to vegetables.
Meanwhile, the chicken meat is cooked. We take it out of the pan. We send browned vegetables, mushrooms to the broth. Cut the chicken meat into small pieces, send it to the pan. Let the broth simmer for 10 minutes.
