How to cook broth?

  • 3 red onions, large (or 4 if small or medium), finely chopped;
  • 2 bunches cilantro, fresh, finely chopped (about 1 cup);
  • 2bunch fresh parsley, finely chopped (about 2 cups);
  • 3-4 garlic cloves, peeled;
  • Table s alt;
  • 1 green chili (such as serrano or jalapeno), fresh;
  • 1 red chili pepper (like Fresno pepper), fresh;
  • 1 cup walnuts, finely chopped;
  • 2 tablespoons coriander, ground;
  • 2 tablespoons mint, fresh, chopped or 1 tablespoon dried mint;
  • 1 tablespoon fenugreek, ground (may substitute mustard seeds);
  • 2 bay leaves;

How to cook?

Cut the chicken thighs into 2-3 cm pieces and place in a large 4 liter saucepan. Add chicken broth, prunes and tomato paste. Bring to a boil, then reduce heat and simmer for 30 minutes.
