- 2 liters of water;
- kernels from three cobs of sweet corn;
- 2 small skinless chicken breast fillets;
- 1 tablespoon soy sauce;
- 1/3 cup fresh coriander leaves.
Place the noodles in a bowl and cover with hot water for 10 minutes, then drain. Heat the oil in a saucepan over medium heat. Add onion, garlic and ginger. Cook, stirring, for 3 minutes or until the onion is softened.
Add water and bring to a boil. Stir in corn, chicken and soy sauce. Reduce fire to minimum. Simmer for 2-4 minutes until the chicken iscooked.
Add noodles. Cook over low heat for 1 minute. Stir in coriander, season with s alt and pepper.
