Apple a day keeps a doctor away ("One apple a day will drive away a doctor") - you must have heard this old saying, known all over the world. Of course, this fruit is not only he althy, but also very tasty. Almost everyone loves juicy, crunchy, sweet and sour apples. And in our country it is also one of the most affordable sources of vitamins. But just eating apples every day can get boring. In this case, a variety of recipes with them come to the rescue. Now autumn is the perfect season for homemade apple baking. The most popular recipe known to everyone is probably charlotte. But today we propose to cook something different, namely, a butter pie with apples, as well as nuts and other additives.
Don't worry if you've never made a muffin before. Our recipe with a detailed description and photo will help you cope with this task with a bang. From the resulting amount of dough, you can make as many as three pies with a variation of fillings.
Preparing the basis for pies
Many novice pastry chefs are intimidated by the word"opara", it makes you even refuse the recipe you like. In fact, everything is not at all scary, the main thing here is to follow a clear pattern and, no matter how strange it may sound, to love and feel the dough. Many housewives say that baking must be cooked in a good mood. So let's get positive and go ahead!
Preparatory stage: dough
We will need:
- pack of milk (900 ml - 1 liter);
- fresh yeast (50 grams);
- sugar (big spoon);
- s alt (a teaspoon without a slide);
- flour (add, focusing on the consistency of the dough).
Fresh yeast should be broken into small pieces. Warm the milk slightly (it should not be very hot) and dilute the yeast in it. Add sugar and s alt, mix thoroughly. Now gradually add flour and monitor the consistency of the dough. It is necessary that the resulting mass resembled thick sour cream. We have achieved the required condition, cover with a film and leave in a warm place.
The dough should fit. The waiting time is approximately half an hour. You will see for yourself how the mass in the bowl rises, at least doubling in size!
Next step: baking
For its preparation we need:
- sugar (300 grams);
- eggs (4 pieces);
- butter (pack);
- vegetable oil (large spoon).
Beat eggs with granulated sugar until smooth. Melt butter and leave to cool. After the lapse ofhalf an hour we take the dough and add the egg-sugar mixture to it, gradually pour in the butter, not forgetting to thoroughly stir the dough. Add a little more (about half a cup) flour and vegetable oil. Everything, now the main thing is to monitor the condition of the dough and knead it well, adding flour as needed. How to understand how much to pour? Very simple - the dough should easily move away from your hands, rolling into a lump. But at the same time, do not be too tight, steep and heavy. Delicate soft dough is a guarantee that your sweet apple pie will be tender and airy.
The dough is ready, you can leave it for a few more minutes, and in the meantime work on the filling.
Covered Apple Pie
The recipe with the photo above was the basis of our further creativity. From the resulting dough, you can now make several different types of pastries. Let's start with the closed pie. We will make the filling from apples with dried fruits. Take 5 medium apples, half a glass of chopped dried apricots and the same amount of dark raisins. It is better to soak dried fruits in advance in hot water for 5-7 minutes.
Assembling the pie is very easy. We take a container for baking (you can use a frying pan with high sides) and grease it with oil, preferably creamy. We separate from our test about a third. We divide it into two parts. Roll out both in the form of a circle (or other shape, depending on the baking dish). We lay out the bottom, properly leveling and leaving the sides. Then we postfilling - diced apples mixed with dried fruits. Sprinkle them with 1-2 tablespoons of sugar or pour honey on top. We take the second part of the rolled out dough and close the pie. The edges need to be carefully pinched.
The oven must be preheated to 200 degrees, bake the cake at this temperature for 15 minutes. Then reduce the heat to 170-180 degrees. Readiness of the cake to check with a stick. On average, this will take 40 minutes. Sweet apple pie can be served warm with a scoop of vanilla ice cream. Believe me, this dessert is the most delicious!
Banana Apple Pie
We still have 2/3 of the dough left. Half of this portion will go to the next dessert. For this recipe, you will need three large apples, two small bananas and berry jam (cherries, currants, blueberries). Fruit cut into thin slices.
Grease a baking dish with oil and lightly sprinkle with flour. The dough is well-distanced, it is soft and pliable, so you can level it directly in the form. Lubricate the dough with jam on top, spread the banana slices and decorate the rich pie with apples. In the oven, preheated to 180 degrees, cook for 35-40 minutes. Ready dessert can be sprinkled with nuts.
Pie with apples and berries
The last third of our great test is left. We offer to put it on a delicious butter pie with apples, berries and granola. We line the bottom of the mold in the same way as in the first recipe. Defrost a glass of your favorite berries (or use fresh), apples(3-4 pieces) cut into small cubes, mix everything together with the addition of sugar to taste.
Prepare crumbs for sprinkling as follows: mix 5-6 tablespoons of oatmeal with two tablespoons of honey and chopped nuts. Mix well and sprinkle the mixture over the pie. It is cooked in the oven in the same way as the other two, about forty minutes. The peculiarity of this dessert is that it will have a crispy crust in the form of granola on top.
