"Negro's smile" is a very simple and incredibly tasty dessert that even a not very experienced hostess can handle. The cake got its original and rather extravagant name because of its appearance - on a rich, dark chocolate biscuit there is a layer of snow-white cream, which in turn is covered with chocolate icing. Cake "Smile of a Negro" is not only not a shame to serve guests on a festive table, but you can also pamper your children with it,because all the ingredients are absolutely natural, and a dessert prepared by oneself is always much tastier.

As already mentioned, the "Negro Smile" cake (see photo above) consists of three main layers: biscuit, meringue cream and icing. Each of them requires the simplest components, the number of which we will indicate in the following table:

Butter intended for making biscuits is brought to a softened state (leave it in the room for a couple of hours), after which it is cut into pieces and beaten with a mixer at high speed. Once the butter is creamy, add the egg yolks one at a time while continuing to beat. After the yolks, sugar and cocoa are added to the dough, everything is thoroughly beaten. Soda is added to kefir, thoroughly mixed and poured into the oil-egg mass. Flour is added at the end of the kneading. The consistency of the biscuit dough should be like pancakes. Prepare the surface of the baking dish ahead of time by making a "French shirt" - a thin layer of butter sprinkled with flour. The biscuit is baked for about half an hour at a temperature of 180 degrees and soaked hot.

Preparing the cream and decorating the cake

For the preparation of meringue cream, use chilled egg whites - so they will fluff up more magnificently. First, the proteins are whipped in a dry bowl with a pinch of s alt until soft peaks are reached, then sugar is gradually added. Beating is carried out until a lush white mass with stable peaks is obtained. The meringue is laid out in a thick layer on the chocolate sponge cake, after which the future "Negro's Smile" cake is sent to the oven for 7-9 minutes.

While the cake is baking, prepare the chocolate frosting. To do this, melt all the ingredients in a water bath, mix thoroughly and bring to a boil. Cool quickly and return to the fire, bringing the icing to a boil. This method will achieve a more delicate and silky texture. The icing is cooled to room temperature, after which the dessert is covered with it and sent to the refrigerator for several hours. Ready cake "Negro's smile" is served on the table, cut into several pieces.
