Ingredients

Piano cake is considered difficult to prepare, as it requires a lot of ingredients. You need to stock up on a lot of food. For the chocolate biscuit:

  • eggs - 5 pcs;
  • sweet apricot jam - 1 cup;
  • sugar;
  • butter - 3 tbsp. l.;
  • cocoa powder;
  • flour - half a mug.

For light cake:

  • sugar - 150 g;
  • eggs 5 pieces;
  • flour - half a glass;
  • warm water - 50 ml.

Filling (cream):

  • sour cream with fat content from 25% - 450 g;
  • sugar - 4 tbsp. l.;
  • vanilla sugar;
  • sifted flour - 3 tbsp. l.

Peach filling:

  • juicy sweet peaches;
  • sugar;
  • agar-agar;
  • cream - 3 tbsp. l.

Recipecake "Piano"

As mentioned earlier, it consists of several levels. This is a chocolate and light biscuit, as well as layers of peaches and cream. Cake "Piano" should turn out juicy and incredibly tasty. Let's start cooking.

Cooking chocolate biscuit:

  • First you need to separate the whites from the yolks. Then gradually add sugar, beating with a whisk or blender. You should end up with a soft and airy meringue.
  • We work separately with yolks. To them should be added apricot jam, cocoa powder, butter and flour. Mix well the whole mass, and then gradually add to the meringue.
  • Place the whole dough on a baking sheet pre-greased with butter and bake at 180 degrees for about 30 minutes.
  • After baking, carefully cut the biscuit into two even pieces.

Second biscuit recipe:

  • first you need to add sugar to the eggs and mix everything;
  • pour water into the mass and add flour;
  • beat well;
  • bake the dough at 180 degrees for 15 minutes.

Filling and cream:

  • It is necessary to thoroughly mix sour cream with sugar, flour and vanilla. It turns out the most delicate cream.
  • Then we start preparing the peach filling. First, peel and pit the peaches.
  • Then you need to cut the fruit into small pieces.
  • Next, pour water into a container, add agar-agar, sugar, peaches and cook over low heat until softenedfruits.
  • Then you need to put three spoons of cream into the filling and mix everything.

You can also add nuts to the cake.

Form the cake and decorate

After everything is ready, we proceed to the formation of the "Piano" cake. First you need to put a chocolate biscuit. Then spread cream on top of it with a thin layer and put pieces of peach filling. The second layer will be a light biscuit, which should also be cut into two parts. We put cream and peaches on it. The third layer will again be the chocolate cake. We do all the same actions with a dark biscuit. Then we put the last row - this is a light cake.

Decorate the cake as you like. For example, grease the top and sides with the remaining cream, and beautifully lay fresh peaches on top and decorate the edges with whipped cream. You can also melt milk chocolate in a water bath, and then coat the pastries. As a decor, sprinkle it with shavings of white and dark chocolate.
