Pasta and everything that is prepared from them, people primarily associate with Italy. Indeed, in this country, pasta with vegetables is the same familiar dish as lard in Ukraine.
Mediterranean option
Those who have no idea about Italy can start their acquaintance with the national cuisine. Pasta with vegetables is perfect for this. In some recipes, it is called "Mediterranean". To work, you need quite a bit: for 0.5 kilograms of any pasta, 2 red and green sweet peppers, a couple of onions, one large eggplant and zucchini each, s alt, 3 cloves of garlic, 2 cans of canned tomatoes, ground pepper, 150 grams of vegetable oil and dried herbs (oregano, basil).
Do everything step by step:
- Wash onions and peppers, peel and cut into large pieces.
- Fry prepared vegetables in oil for 5 minutes, adding 1 clove of garlic, passed through a press, to the mixture.
- With zucchini and eggplant, do the same procedure. It is better to work on different dishes.
- Collect products in one deep frying pan, add s alt, tomatoes, herbs (a couple of tablespoons), pepper. Simmer for 20 minutes on a very smallfire.
- Boil the pasta in a separate pot. Drain water and add pasta to vegetables. Food should be stewed together for 1-2 minutes.
Now the pasta with vegetables is ready, it can be safely served.
A worthy alternative
If desired, pasta with vegetables can be prepared much easier. To do this, you only need 400 grams of spaghetti, 1 tomato, 70 grams of hard cheese, half an onion and a head of garlic, a teaspoon of s alt, 30 milliliters of vegetable oil, parsley (a couple of sprigs) and 0.8 liters of water.
The process goes in several stages:
1) Food preparation. To do this, chop the garlic with a knife, cut the onion into half rings, cut the tomatoes into cubes, and grate the cheese with a grater.
2) Put the pasta, tomatoes, onion, oil into the pan. Pour food with water and put on the stove. After boiling, cook until the water evaporates.
3) Add garlic, stir and cook again for another 2 minutes.
4) Pour in the cheese, cover and turn off the heat. In a couple of minutes, the dish will be completely ready to eat.
Before serving on plates, mix it well, and then you can decorate with small pieces of fresh tomatoes.
Fragrance
If you look in the dictionary, you can see that the word "paste" has another meaning. This is a porridge-like homogeneous mass. In cooking, there is also the concept of "tomato paste". It is, in fact, a product obtained by boilingjuicy tomatoes. But if you add a few more products from the garden to the usual mixture, you will get excellent vegetables with tomato paste. To prepare the dish you will need: 10 tomatoes, 2 onions, 6 cloves of garlic, 2 peppers, a tablespoon of sugar, 70 grams of vegetable oil, 30 grams of vinegar, a little s alt and 2 glasses of water.
Work is carried out in the usual sequence:
- Rinse all vegetables thoroughly, and clean the inside of the pepper from seeds.
- Then cut everything with a knife into medium-sized cubes.
- Pour oil into a deep frying pan with a thick bottom, put on fire and bring to a boil. Put the onion and garlic there and fry for 3 minutes until a characteristic smell appears.
- Add tomatoes and peppers. Continue to simmer the mixture for another 10-15 minutes until the products soften.
- Pour ½ cup of water into the pan and continue to heat the contents for 5 minutes.
- Add the ingredients remaining according to the recipe and continue the cooking process for another 5 minutes.
- As soon as all the ingredients turn into porridge, close the lid tightly and leave the pan to cool the product.
If desired, the mixture can be ground in a blender. If not, then even in its usual form, it will be a great addition to boiled rice, pasta or meat dishes.
Pasta in sauce
In Italian cuisine, there are often dishes when pasta is immediately cooked in sauce. An example of this is pasta with vegetables in a creamy sauce. Making a dish is easy, and from productsyou only need: 0.5 kilograms of spaghetti, s alt, one piece of different vegetables (onions, carrots, zucchini, bell peppers), ground pepper and 200 grams of cream (20% fat). If desired, you can add a little butter and cheese.
The process technology is simple:
- Wash fresh vegetables and gently chop: carrots, zucchini and sweet peppers - straws, and onions - half rings.
- To start, lightly fry the carrots in a pan.
- Add chopped pepper and fry the food together a little. Do the same with the rest of the vegetables.
- At this time, boil the spaghetti. Drain water and lightly drizzle pasta with oil and shake to prevent sticking together.
- Add a decoction of spaghetti, spices to vegetables, stew them a little.
- Pour the cream into the softened mixture, season with s alt and pepper. The mass should boil a little.
- Pour the finished sauce into a saucepan with pasta and mix gently.
Serve immediately, while the dish retains a fresh smell and aroma.
Appetizing ingredient
Everyone knows that Italian cuisine is not just tasty. They look very appetizing and look spectacular on a served table. A striking example of this is pasta with vegetables in Italian. Literally a minimum of products is required: spaghetti, 200 grams of any minced meat, 3 tomatoes, 2 sweet peppers, s alt, 3 cloves of garlic, dill and ground pepper.

Now it remains only to put everything on a plate. The pasta can be rolled into a nest, and the vegetable mixture and herbs can be spread around. But there is another option: mix the products. It all depends on the desire of the cook.
Budget option
There are situations when the house does not have a large selection of products. It can happen to anyone. For such an emergency, pasta with stewed vegetables is perfect. An ideal dish for a family dinner, and very little food is required: for 250 grams of spaghetti - 1 onion, 2 tomatoes, 1 carrot, 50 grams of butter and 35 grams of vegetable oil, s alt, a small bunch of parsley and fragrant seasonings.
Cooking method:
- First boil the spaghetti, drain the water and fill them with butter.
- Fry chopped vegetables for 5 minutes in a hot frying pan.
- Put prepared spaghetti, s alt and selected spices there. Cover everything with a lid and simmer for 5-7 minutes.
- Put the finished dish on plates and garnish with herbs.
You can cook such a simple dinner in just an hour. Perhaps someone will deal with this even faster. But the pleasant impression and good mood that will remain after this dish will last for a long time.
Strong menu
Pasta with vegetables is a dish that quickly leads to satiety and makes it possible not to overdo it with the quantity. Confirmation of the above will be pasta with vegetables in tomato sauce. First you need to stock up on products: 0.4 kilograms of pasta (spaghetti, "butterflies" or any others), 1 jar of tomato sauce, ground pepper, 200 grams of broccoli, 150 grams of cauliflower, 100 grams of vegetable mixture (corn, carrots and green peas) and some s alt.
The whole process will take no more than 30 minutes:
- Put pasta to boil.
- Meanwhile fry vegetables in oil in a frying pan.
- Add tomato paste, cover the lid, leave the mixture to simmer slowly.
- Add the cooked and washed pasta to the boiling mass.
- Boil everything together for a couple of minutes, then put on a dish and sprinkle with grated cheese (optional).
This dish is perfect for a nice conversation with friends. And to keep the conversation going, you can serve a glass of wine to the table.
