After that, it was bottled and corked. The neck of each bottle was tied with wire or twine and dipped in resin. Tsimlyansk champagne was stored standing in pits, which were specially dug out, where they put the bottles one on top of the other, making layers ofstraw and earth. There it fermented a second time and stopped when sugar and carbon dioxide were added. Now, of course, champagne, wines, cognacs are made using modern equipment that uses advanced technologies.
