Snow Mountain Cake

Ingredients
What do we need to make a delicious "Mountain" cake? For a small version of it, prepare:
- 350 g flour;
- 180g sugar;
- 250g butter;
- 2 eggs;
- 1 tsp baking powder;
- 70g hazelnuts;
- 0.5 lemon;
- 500 ml sour cream;
- 500 ml condensed milk;
- 1 pinch of vanilla;
- 100 g coconut flakes.
For baking, butter is often replaced with margarine or spread, such a replacement does not affect the taste and structure of baking in any way, but it saves two times the cost of butter.

Let's start making the cake with the dough. To do this, beat two eggs into a deep bowl and beat with a mixer until a fluffy high foam. Use a bowl with high sides for this.
Add sugar to egg froth and mix again. Squeeze in the juice of half a lemon and baking powder. If you do not have baking powder, you can replace it with soda slaked with vinegar. Mix thoroughly again and leave.
Before preparing the cookie dough, take out the butter and warm to room temperature beforehand. In this state, it is easier to work with him.
Sift flour into a separate container. This is a must for baking: the flour is saturated with oxygen, thanks to which the cookies will turn out to be porous and better soaked with cream.
Add margarine, cut into small cubes, to the flour. Mix the margarine and flour by hand, then pour in the egg and sugar mixture and knead into a moist, soft dough.
Twist the dough into one big ball and leave it inin the refrigerator for 20 minutes before you start rolling the balls, so that it infuses a little and reaches the desired condition. It is advisable to cover the dough with cling film.
After 20 minutes, remove the dough from the refrigerator. Pinch off piece by piece, make a small pancake in your hands. Place one peeled hazelnut in the center. Roll the dough into a ball.
Cover the baking sheet with baking parchment. Spread the finished balls on it with a distance of 2 cm from each other.
Cookies are baked for 15–20 minutes at a temperature of 180 degrees. Preheat the oven in advance.
Shaping the cake
When the cookies have cooled, you can begin to form a delicious, snowy cake. First, let's prepare the cream. To do this, in a separate container with high sides, beat sour cream and condensed milk with a mixer, add a pinch of vanillin.
Dip the cooled cookies in sour cream and place on a wide tray. Leave the hemispheres for 20 minutes so that they are thoroughly saturated with fragrant cream.
After 20 minutes, fold the cookies into a pyramid. Pour the rest of the cream over the Mountain Cake, then sprinkle evenly with the coconut flakes. In order for the cake to be well saturated with the aroma of coconut, softened under sour cream, it is advisable to leave the cake all night. But if you can't wait, then you can eat it in an hour.
