Traditional zrazy, as a national dish of Lithuanian, Polish, Ukrainian and Belarusian cuisine, is made from minced meat stuffed with vegetables, mushrooms or eggs. There was no mention of any mashed potatoes in the original recipe. And changes in cooking technology, apparently, were made by the poor, who simply could not afford meat. The choice of filling options has also become much wider.

Potato dough for zraz

There are a lot of filling options for this traditional Slavic dish. Anything can be put inside a potato cutlet: minced meat, mushrooms with onions, boiled eggs, herbs, vegetables. Andeven with sausages, zrazy will turn out terribly tasty. But as a basis, mashed potatoes are always used, prepared in the following way:

  1. Potatoes (1 kg) wash, peel, cut into large pieces and put in a saucepan. Pour water to the top and put on medium heat.
  2. As soon as the potatoes boil, s alt them. Simmer until tender.
  3. Drain the water after 20 minutes. Mash the potatoes with a mortar, pepper and cool at room temperature.
  4. Introduce 1 egg into the cooled potatoes. Add 50 g flour. Mix the puree well. It should be thick enough to be easy to work with. Don't add too much flour. Otherwise, the zrazy will turn out rubber.

Making mashed potatoes for zrazy is only half the battle. It is equally important to learn how to properly form products so that they do not fall apart when frying. But first you need to decide with what filling to make potato zrazy. Here are the most popular options:

  • minced meat (pork, beef, chicken);
  • mushrooms;
  • boiled egg with green onions;
  • fried cabbage;
  • fish;
  • liver and offal;
  • sausages;
  • prune with garlic;
  • vegetables;
  • cheese.

Required condition - the filling should not be too wet.

To make zrazy, you need to put a small amount of minced potato on a floured tableand flatten into a cake. Place a tablespoon of filling inside. Raise the edges of the cake and form a patty with your hands. Using the wide side of the knife or the palm of your hand, flatten it. Roll zrazy in flour or breadcrumbs on all sides. Fry semi-finished products in a pan with vegetable oil until golden brown, first on one side and then on the other.

Pork, beef, chicken, and even turkey are suitable for this recipe. The meat must be passed through a meat grinder to make minced meat. Well, then you can start preparing the meat filling:

  1. Finely chop 1 onion with a knife and grate the carrots.
  2. Fry the vegetables in vegetable oil (2 tablespoons) for 3 minutes.
  3. Put the minced meat in the pan and fry it until cooked together with onions and carrots. S alt and pepper at the very end of cooking.
  4. Cool the filling, then use to stuff mashed potato tortillas.
  5. Fry potato zrazy with meat filling in vegetable oil and serve with sour cream. The dish can be stored in the refrigerator for up to two days, and reheated in the microwave before serving.

Stuffing for sausage zrazy

The following dish is a favorite among children. Sausages are taken as a filling for potato zrazy, and they do not need to be crushed to a state of minced meat. Preparing this dish is easy:

  1. Cook potatoes and make mashed potatoes. Only use a potato masher, not a blender. Otherwise, the puree will be too viscous. Add egg and flour to it.
  2. Small sausages pre-boil or lightly fry in a pan.
  3. Make a ball out of the puree and flatten it in the palm of your hand to make a cake. Put a sausage in the center, then form a cutlet from the cake. Bread it in breadcrumbs or flour.

  1. Mushrooms (300 g) finely chopped.
  2. Chop 2-3 onions.
  3. Fry it in vegetable oil (3 tablespoons) until a nice golden color.
  4. Put the chopped mushrooms into the pan with the onion. Fry them for 2-3 minutes over medium heat. After that, cover the pan with a lid, reduce the heat to a minimum and continue cooking until the liquid has completely evaporated. At the very end, add s alt and pepper.
  5. Cool the filling. In potato cakes put 1 tbsp. l. mushrooms with onions. Form elongated patties. Fry them in vegetable oil until appetizing.crust on top.

Spicy zrazy with prunes

The combination of potatoes with prunes is quite unusual. But how delicious are potato zrazy. Prunes filling gives the dish a spicy sourness, which is so lacking in potatoes. It is very easy to prepare such zrazy:

  1. Boil potatoes and make dough from mashed potatoes, eggs and flour.
  2. Remove pits from prunes if necessary. Put it in a bowl and pour boiling water over it. Leave on the table for 15 minutes.
  3. Prunes get out of the water and put on a paper towel.
  4. Put dried berries in the center of mashed potato cakes.
  5. If desired, prunes can be cut with a knife and, for piquancy, finely chopped garlic can be added to it.
  6. Zrazy potatoes with prunes fry, as usual, in vegetable oil.

Liver and potatoes go great together. Many housewives for fried pies choose this type of filling. In zrazy, the same ingredients are used, but they do not mix with each other. Inside each such pie there will be chopped liver, and mashed potatoes on the outside. And no fried dough!

  1. While the potatoes are cooking, it's time to prepare the stuffing. To do this, you will need onions, carrots, beef liver (300 g), s alt and pepper.
  2. Heat vegetable oil in a frying pan. Fry on it first chopped onion for 5 minutes, and then carrots, grated on a coarse grater.
  3. Add pieces of beef liver to vegetables. Shuffle.
  4. Cover the pan with a lid and cook the liver for 15 minutes. It is important not to overdry the liver so that it remains soft. Add black pepper and s alt at the end of cooking.

  1. Put 5-6 raw eggs in a saucepan, pour water over them. Add a tablespoon each of s alt and vinegar.
  2. Put the saucepan over medium heat and cook the eggs for 10-12 minutes after boiling. Then put them in cold water, cool and peel.
  3. Cut boiled eggs into small cubes.
  4. Finely chop a bunch of green onions and dill.
  5. Combine eggs with herbs, season them with s alt and pepper. Stir stuffing.
  6. Immediately use minced egg to prepare zrazy.

Below is another option for using leftover mashed potatoes after dinner, which also allows you to diversify the usual menu. This recipe uses hard cheese as the filling. By the way, there is no need to grate it or chop it into cubes. Inside the potato cake, you can immediately put a whole piece (weighing 30-50 g), then the product will be easier to form. You need to prepare such zrazy as follows:

  1. Make potato dough by adding 50-70 g of flour and 1 egg to the cooled mashed potatoes.
  2. Shape it into cakes on a plate.
  3. Cheesecut into thin plates (bars) a little smaller than a tortilla.
  4. Wrap cheese in mashed potatoes.
  5. Roll prepared zrazy in flour or bread crumbs and fry in a pan until golden brown on top. The high temperature will melt the cheese inside and the filling will be very juicy.

  1. Chop white cabbage (500 g) with a knife.
  2. Chop the onion finely and grate the carrots.

Potato zrazy with vegetable filling

If you do not add an egg to the cooled boiled potatoes, but cook the filling exclusively from vegetables, you will get just an excellent lean dish. Such zrazy will help to diversifyyour table during church fasting. They can also be prepared for vegetarians. As with meat filling, potato zrazy with vegetables is no less tasty. The process of their preparation consists of the following steps:

  1. Onions are fried in vegetable oil, and then grated carrots (2 pcs each). It is recommended to constantly stir the frying so that the vegetables do not burn.
  2. When onions and carrots become soft, send frozen green beans (300 g) to the pan. It should be s alted immediately.
  3. Cover the pan with a lid and cook the vegetables over low heat for 5 minutes. If desired, the beans can be pre-boiled for 2 minutes. Then the filling will turn out softer.
  4. Stuff blanks for zrazy with vegetable filling, arrange them in the form of cutlets and send them to a frying pan with hot sunflower oil. Fry quickly until browned on both sides.

Sauce

With different fillings, potato zrazy are equally tasty. Trying each of the above recipes is recommended to find your perfect ground beef.

But potato zrazy is served with sour cream sauce. To prepare it, you need to mix 200 ml of sour cream with dill and garlic squeezed through a press. Then the ingredients should be s alted to taste, pepper and the sauce can be considered ready. It should be done just before serving.
