How to cook egg benedict
For two servings you will need:
- three chicken eggs (more precisely, 2 eggs and one yolk);
- 80 grams of butter;
- 2/3 teaspoon lemon juice;

- 2 slices of ham (smoked red fish or brisket);
- greens to taste;
- s alt and black pepper;
- four tablespoons of vinegar.
First you need to prepare the hollandaise sauce. To do this, mix water, one yolk and lemon juice, and put in a water bath. At the same time, it is necessary to ensure that the fire is not strong. Then you should cut the cold butter into cubes and throw the pieces into the mixture one at a time, stirring constantly. When one piece of butter melts, you need to add the next one and do so until it runs out. S alt and pepper the finished sauce to taste and leave to cool. Then you need to cook the poached egg. Bring one liter of water to a boil, add a teaspoon of s alt and four teaspoons of vinegar, then reduce the heat so that the water boils just a little. Break the eggs into a bowl separately so that the yolk remains intact (just like when cooking with fried eggs). Using a spoon in hot water with s alt and vinegar, make a "whirlpool" and carefully, tilting the bowl, dip the egg into the water. You need to cook for strictly three minutes, if more, then the yolk will harden.
Then do the same with the second egg. While they are cooking, you need to fry a bun in a pan or in the oven. Put a piece of smoked red fish (ham or brisket) on top of it. Place a poached egg on top, pour over the hollandaise sauce and sprinkle with chopped herbs. Must be served immediately. That's it, eggs benedict are ready, enjoy your meal.
