What to use for filling and base?

Of course, the eggplant pizza recipe is not very difficult. As usual, tomato sauce goes in the middle (or freshtomatoes ground in a blender), sausage, poultry or meat, various vegetables and your favorite spices, hard cheese, olives. And for the base, we prepare almost any dough that you like. At least there is always a choice: yeast, yeast-free, puff. You can use the dough sold in the supermarket, purchase a ready-made base, make it yourself. And they bake pizza with eggplant, mainly using the oven. For the dough: a glass of flour, a couple of tablespoons of butter, s alt and water.

For the filling: three tomatoes, one eggplant, a couple of cloves of garlic, one bell pepper, spices, hard cheese in the amount of 150-200 grams.

Cooking easy

  1. Mix all the ingredients prepared for the dough, knead well and leave for half an hour, covered with a film.
  2. At this time, we are preparing the filling. My eggplant, cut into slices, fry in a greased pan. Remember that it must first be soaked so that the bitterness disappears. Remove from the pan into a container. Adding s alt.
  3. Separately fry the chopped garlic cloves, adding chopped sweet pepper.
  4. Peel the tomatoes from the skins (previously dousing them with boiling water), add to the same pan, and reduce the sauce a little so that it becomes thick and rich, seasoning with s alt and Italian herbs.
  5. Roll out the dough into a thinner cake, but so that the filling does not break through it. Italian chefs, by the way, stretch it by hand - but such skill can only be achieved with cooking experience.
  6. Spread a layer of sauce on a layer of dough, spread the fried eggplant mugs on top.
  7. Top everything on top with grated hard cheese, and send it to bake in the oven.
  8. Cook eggplant pizza for about 10-15 minutes at 200 degrees Celsius.

We take out a fragrant, tasty, he althy dish from the oven and serve it to the table, cutting it with a special knife. It's round, with a handle. But if it is not available, then you can get by with the usual. Just be careful, otherwise the filling will “float” off the cut piece.

How to cook?

  1. Knead the dough in advance, as it will need to stand for an hour. We add a little s alt, a spoonful of sugar to the milk heated to 27-30 degrees, pour in the oil and introduce the yeast. Mix everything well - let the yeast begin to "work". Then add the flour, kneading a rather thick, but not steep mass. The dough should spread when lightly hitting the table.
  2. Remove the dough under the towel in a container, let it rise.
  3. Cut the onions in half rings, fry in a pan for a few minutes.
  4. Add sliced eggplants, fry them with onions over medium heat. Everything should brown, but not reach readiness. Turn off the fire, cool the future stuffing.
  5. Arbitrary pieces (can be rings) cut the sausage.
  6. Three cheese on a grater.
  7. We take the risen dough, and at the same time, turn on the oven at 200 degrees.
  8. Roll out the base for the dish into a thin layer of a rounded shape, transfer it to a baking sheet greased with oil, flavor it with plenty of ketchup or tomato paste (you can make them yourself so as not to buy in a store with preservatives).
  9. Spread eggplant and onion pieces evenly, alternating with sausage slices.
  10. Sprinkle everything generously with grated cheese on top, put it in the oven, which has already warmed up well, and bake eggplant pizza until golden brown and ready.

The delicacy should be served on a large beautiful dish. Bon appetit!
