For the most part, curd dishes are a very tasty and he althy product. They can be sweet or s alty, fresh or spicy, as they say, not for everyone. Here we will talk about one of these dishes.
Such familiar juicers
Sochniki, otherwise pies with cottage cheese, quite often appear on the table in many families. They are not at all difficult to prepare, and the taste delights everyone at home. The juicy recipe, like the recipes of many well-known dishes, has been supplemented over time with various components, new ingredients. And sometimes what we find in different cookbooks differs sharply from the original, classic version. This is what we will discuss now.
Juice Recipe:
- We take butter - 50-60 gr, let it stand in the kitchen to warm up and even melt a little. Pour a glass of sugar, a bag of vanillin to it and drive in 2 eggs. All this is carefully ground into a homogeneous mass.
-
Three-quarters of a cup of sour cream mixed with a spoonful of baking powder, spread inher butter-egg mass, pour 3 cups of flour there. We knead the dough. Our succulent recipe suggests that it will turn out a little watery and will stick to your hands. Do not be afraid and do not rush to correct the “mistake”. Hard dough is not suitable for this dish. Just when rolling out the rounds for the filling, you can dip the pieces of dough in flour. When the dough is ready, leave it to "rest".
- Let's do the stuffing ourselves. Since this recipe is sweet, we make the filling appropriate. We’ll clarify right away: raisins, dried apricots, chopped walnuts are added to the cottage cheese if desired. Only the berries should be pre-soaked in hot water and then dried. Finely chop the dried apricots.
- 400 g of cottage cheese is thoroughly wiped through a sieve, sieve or passed through a meat grinder. Sugar is added - 2-3 tablespoons, depending on the acidity of the curd mass itself. If you want, you can add 4, but no more: the cottage cheese will turn out to be watery. Grind everything, beat in 2 eggs, mix well again. Then add sour cream - 2 tablespoons, pour the same amount of semolina. You can put a small piece of cow's butter. Stir thoroughly, grind so that there are no lumps. Raisins or other additives are added last.
-
How the juices are made further, the recipe with the photo shows clearly. The infused dough is kneaded again, sprinkled with a little flour. It is rolled into a long roller or sausage, which is cut into small pieces of equal size. The size of each is 3-4 centimeters. Roll out of them with a rolling pin mugshalf a centimeter thick. On each closer to the edge spread the filling - a few teaspoons. The free edge of the mug is thrown over the curd mass, pinched. If you compare cottage cheese juices, a recipe with a photo of them, with traditional dumplings, both dishes will turn out to be very similar. Only dumplings are thrown into boiling water, and ready-made succulents are laid out on an oiled baking sheet and baked for 16-20 minutes in the oven at a temperature of 180-190 degrees - until they turn red. Then, like pies, the juicers are spread on a towel, covered and left to cool slightly.
The dish smells amazing, its taste is beyond praise. Delicacy, and more!
