To prepare this dish, we need pork ribs - about a kilogram. Usually they are sold by tape: it is advisable to buy like that. That's right, on the ribbon there is more meat on the ribs, but not without the bone part. Because the part without meat is more suitable for soup than for frying. For cooking, any set of spices (of those to which you are most attached) will come in handy. Take honey and tomato paste - a couple of spoons each, do not forget the onion.

Stewed pork ribs: cooking step by step

  1. Cut the ribs into pieces. The size of the pieces is dictated by the size of the ribs: that is, we cut along the rib. They are quite fatty, so we will continue to fry them, and in order to save a little, we cut off the fat from the product.
  2. Cut the fat into small cubes, then fry them in this fat. If you have leaner ribs, thenfry them in vegetable oil.
  3. Besides this, we use onions to cook stewed ribs. We also cut it into cubes, then we will need to fry it all.
  4. Put chopped bacon on the pan and melt the fat. We do this on the slowest fire so that the pieces of fat do not burn. By the way, as a result, very tasty cracklings are obtained, which can then be s alted / peppered, and here they are - a wonderful dish in themselves (we put them on a separate plate).
  5. And on the rendered fat we will fry pork ribs. If you have a lot of product, and it does not fit in a pan, then you do not need to try to fry everything at once. Do it in several approaches, that is, you need to lay out the ribs in such a way that there is a distance between them, and they are fried, not boiled.
  6. Fry on both sides until light brown. Then we put the ribs in a saucepan, in which we will further stew them. And then put a new batch of the product in the same pan, also fry on both sides. Continue doing this until all the meat is fried.
  7. Then put all the ribs in a saucepan, fry the chopped onion in the same fat. Cook until light golden brown. We will also put it to the stewed ribs.
  8. Mix everything thoroughly in a container for further preparation. Then you will need to add spices and honey here. Pork goes very well with honey, just don't add too much of it. Next, s alt and pepper, pour in a little water to cover the pork with onions. Don't add too much liquidneed.
  9. Cover the saucepan with a lid, let it stew over low heat for about 30 minutes. Somewhere after 20 minutes of stewing, juice will stand out: from onion, as well as meat. That is, there will be quite a lot of liquid in the dishes.
  10. Add tomato paste here, stir and close the lid. We will cook the stewed ribs until fully cooked for about one hour. Ten minutes before readiness, add the bay leaf and chopped garlic. Close the lid and simmer for another 10 minutes.

Final

Turn off the fire. Our dish is almost ready. If you like homogeneous sauces, then take out the ribs, lay out the bay leaf, it will no longer be needed. And beat the entire liquid mass in which the ribs were stewed with a blender until smooth (but you don’t have to), and then return the reserved stewed ribs to the pan.

With potatoes

In the same way, you can cook stewed ribs with potatoes. To do this, we clean a kilogram of the root crop and cut it into medium cubes. Then we introduce into the dish at the final stage of stewing in a saucepan (15 minutes before readiness). Under the lid for such a time, the potatoes will be perfectly cooked.
