What is the name of minced meat skewers on the grill? In the east, this dish is called "lyulya-kebab". It belongs to Arabic cuisine and is an oblong cutlet fried on coals.

Traditionally minced meat skewers are made from onions and lamb. At the same time, the meat should be very fatty, and quite a lot of onions will be required.

Unlike traditional homemade meatballs, the lula recipe does not require the use of bread or eggs. Only spices are added to lamb with onions, or rather, pepper, cilantro, basil and garlic.

There are a lot of recipes thanks to which you can cook a delicious and satisfying dish on the grill. However, most cooks prefer to use the classic version. To implement it, we need:

  • fresh lamb pulp - about 1 kg;
  • hot onion - about 300 g;
  • lamb fat - approximately 150 g;
  • s alt and black pepper, as well as other spices - optional.

Cooking minced meat

Real kebab on skewers is prepared only from minced meat. To do this, a fresh piece of lamb is thoroughly washed, after which it is intensively choppedcooking knives. They do exactly the same with onions and pre-prepared fat.

As soon as all the products are crushed, they are combined in one bowl, peppered and s alted to taste, and then kneaded with hands, periodically throwing the minced meat on the table. As a result of such actions, a homogeneous and rather viscous product should be obtained.

The viscosity of minced meat is very important for kebab. After all, during the heat treatment process, the meat product should hold well on skewers, and not end up in coals. The correct kneading of lamb, onion and fat also determines how minced kebab will turn out: tender or coarse and fibrous.

Formation

How should a classic kebab be formed correctly? First, wet your hands in cold water. This is necessary so that the coarse minced meat does not stick to the palms. After that, you can safely proceed to the formation of kebab.

Taking the cooked minced lamb in your hands (the size of a palm), you should make a sausage with a diameter of 4-5 centimeters from it. Next, it must be carefully strung on a skewer. If during this process meat juice is released, then the minced meat can be slightly squeezed out before forming the dish.

Having prepared semi-finished products, they should be sent to the freezer for 5 minutes. This will help solidify the fat, which will bind well all the sausages intended for making kebab.

Frying on the grill

Making minced meat

As mentioned above, the classic kebab requires cutting the meat product. However, it can also be passed through an ordinary meat grinder with a large nozzle.

As soon as the pork is chopped, finely chopped onion, black pepper and s alt are added to it. All of the listed ingredients should be thoroughly mixed until a viscous and homogeneous minced meat is formed.

Formation process

If you decide to cook kebab in the oven, then you will need not classic skewers, but long wooden skewers. The process of putting minced meat on them is similar to that described in the first recipe.

Having washed your hands in cold water, you should take a sufficient amount of pork product, form a kind of sausage out of it, which later must be carefully put on a skewer.

Bake in the oven

Once the lula kebab is formed, all the wooden skewers are transferred to the baking sheet. It is not required to additionally lubricate it with oil, since the minced meat has a sufficient amount of fat.

In this form, semi-finished products are sent to the oven, where they are baked for about an hour at a temperature of 190 degrees. In this case, it is very important not to overdry the minced meat. Otherwise, the kebab will turn out dry and tasteless.

In order for the dish to bake evenly, the skewers with the meat product should be turned over periodically. If during this process you notice thatthe kebab is slightly stuck to the baking sheet, then it can be slightly pry off with an ordinary spatula. However, this should be done very carefully, otherwise the whole dish will simply fall apart.

Serving an Arabic dish for a family dinner

After preparing a delicious and tender kebab in the oven, it is carefully removed from the baking sheet and placed on a plate, which is pre-decorated with lettuce leaves and other vegetables. Also, next to the finished barbecue, you can put a small bowl filled with fragrant sauce.
