What are souvlaki
This is a Greek dish that means "skewers" in translation. That is, in other words, souvlaki is a barbecue. In Greece, it is prepared exclusively from pork. In other countries they eat chicken and very rarely lamb.
In some restaurants, meat is cooked not on skewers, but in a pan, then wrapped in a tortilla. Ingredients for souvlaki
Recipes for this dish are varied. However, we will consider two of the simplest and most original ways.cooking. In the first option, you will need the following ingredients:
1. Pork - 0.5 kg.
2. Olive oil - 5 tbsp. l.
3. Garlic - 1 head (5-6 cloves).
4. Lemon - 1 piece
5. Oregano - 7 g.

10. Sugar - 1 tsp (optional).

Cooking barbecue
Prepare wooden skewers in advance, as the taste of the dish depends on them. Cut the meat into small cubes, about 33 cm. And temporarily set aside. Squeeze out all the juice from a whole lemon. To get as much as possible, use a juicer. Now peel the garlic, chop it very finely, put it in a separate container.
In lemon juice, add olive oil and other ingredients that are listed in the recipe. Lastly, add the garlic. Stir the whole mixture and let it brew for about 10 minutes.
Then put the chopped pork into a bag and pour the infused liquid into it. Now mix everything and refrigerate for 2 hours. This is necessary so that the meat is well saturated. The taste of the dish depends on the marinade.
30 minutes before cooking, take wooden skewers and soak them in water. Then they will not smoke during baking. Take the meat out of the fridge and thread it onto skewers.
Souvlaki is best cooked on the grill, but if this is not possible, thenan oven and even a frying pan will do. Fry meat on skewers until golden brown on both sides. Now the dish is ready to eat, and it can be served.
This is the first and easiest cooking method. Now you can move on to the second option, which takes longer to cook, but the dish is more original.
Cooking flat cakes
This dish is distinguished by its delicacy and nutritional value. To begin with, the pita bread is prepared. You will need the following products:
1. Flour - 2 cups (sometimes more, it all depends on the variety).
2. Dry yeast - 7 g.
3. S alt and sugar - 5 g each
4. Olive oil - 1 tbsp. l.
5. Warm boiled water - 1 cup (250 ml).
Pita is quick and easy to make. Pour 125 ml of water into a container and add yeast to it to dissolve. Put a teaspoon of sugar there and set aside for 10 minutes. A fluffy foam should form. In the same container, add the rest of the water, s alt, pour olive oil and, gradually adding flour, knead the dough. It should be smooth and elastic. Such dough does not stick to hands. Add more olive oil if needed.
When the dough is ready, cover it with a clean towel or cling film and place in a warm place for at least 1.5 hours. Then roll in flour and divide into small balls that need to be rolled out. The pita bread should be no more than 0.5 cm thick.
Preheat oven to 180degrees. Only then bake the cakes for about 5 minutes. It shouldn't burn. When a slightly golden hue begins to appear, remove from the oven. Prepare all the cakes in this way.
Cooking meat
It is also called "gyros". That is, it is a filling for cakes. First, 0.5 kg of pork must be cut into thin small strips of about 4 cm and beat them off.
Put the meat in the pot. In the same container, add 5 ml of white wine, chopped onion (1 pc.), Pour 10 ml of olive oil (more if possible). S alt to taste, add 5 g of oregano, savory and marjoram. Put 2-3 g of coriander and chili powder here. The marinade will taste better if you add about 5 ml of wine vinegar.
Stir marinade with meat, cover and set aside for 2-3 hours. When the pork is infused, pour it into a dry frying pan and fry. You don't need to add oil. Fry the meat until tender.
Tzatziki sauce
Souvlaki needs seasoning. In Greece, they add tzatziki sauce. It is done simply. Take two cloves of garlic, rub on a fine grater, add three tablespoons of olive oil to it and s alt a little. Let it steep for 5 minutes.
Then add 10 ml of grape vinegar to the bowl with garlic, put a finely chopped small cucumber in the same place, pour a glass of yogurt. Mix all ingredients in one container. Tzatziki sauce is ready to serve.
Souvlaki filling
Here we are readycakes and meat. However, such a dish cannot be called souvlaki. We still need to prepare the filling. To do this, you will need to mix the following products (for one serving):
1. French fries - 100 g.
