Chicken in wine deserves special attention. It turns out very juicy, soft and extremely tasty.
Chicken in wine with quince
To prepare this dish we need the following ingredients:
- chicken or rooster carcass;
- three large quince;
- half a cinnamon stick;
- one hot pepper;
- butter (ghee);
- smoked bacon, approximately 100g;
- onion;
- half a bottle of red wine or one glass of semi-sweet sherry;
- bay leaf, s alt, thyme, black pepper.

Grind cinnamon in a mortar and add hot dried pepper there. You can also use cayenne pepper or a pinch of very hot paprika. Grind everything until a powder is obtained.
Cut one large quince into eight pieces, then cut each slice again across. In a deep frying pan, fry the quince until golden brown in hot melted butter. While frying quince, addprepared by us in advance a mixture of cinnamon and pepper. Put the quince on a plate and leave it to cool.
We wash the chicken and stuff it with cooled quince, we tie the bird so that the wings and legs do not hang.
Cut the smoked bacon into strips. Wipe the pan dry with a paper towel, then fry the bacon on it. The resulting cracklings are transferred to a bowl with a ceramic surface in which the chicken will be baked.
In the fat obtained from bacon, fry the chicken until golden brown. Every time we turn the carcass, sprinkle it with s alt.
In a baking dish, add bay leaf, a few black peppercorns and fill it all with thinly sliced red onion rings.
Next, lay the chicken sideways in the form and spread the thinly sliced circles of the remaining quince around. You need to do this so that there is no free space in the form.
Then sprinkle chicken with s alt, pour red wine.
Put the mold in the oven and bake at 180 degrees. After about 20 minutes, when all the alcohol has come out of the wine, we take the chicken out of the oven, add a few sprigs of thyme to it, add the required amount of water and bake for another 40 minutes. Then we take it out again, turn it over on the other side, add a little s alt, cover and bake for another half hour.
Next, take the chicken out of the mold, put it on a hot plate and cover with a towel.
Then we filter the liquid from the mold andWe boil it in a saucepan until the volume is reduced by half. When the juice evaporates, add a little flour for density. The result is a very fragrant sauce.
Chicken in red wine with quince goes well with baked pumpkin or potatoes. Before serving, cut the chicken in half, then remove the quince and put it on a plate.
The dish can be garnished with fresh apples or hawthorn (these berries taste good both baked and fresh). The sauce must be served separately.
