Winter is the time when it's hard to find good quality fresh vegetables to make a delicious salad that goes well with cereals, potatoes, and meat. During this period, most vegetables are sluggish, while the amount of pesticides in them goes off scale.
In order not to supply your body with harmful elements, you can prepare various twists for the winter from summer and autumn. For this, we also offer the Troika salad recipe. It is very easy to prepare, but at the same time, the twist itself turns out to be very tasty.
Troika salad
Products needed for a salad are easy to get. You will need:
- Zucchini - 3 pieces.
- S alt - 2 pinches.
- Eggplant - 3 fruits.
- Sugar - 30 grams.
- Zucchini - 3 pieces.
- Sunflower oil - 100 milliliters.
- Bulgarian peppers - 3 fruits.
- Vinegar - 1 spoon.
- Tomatoes - 3 pieces.
Cooking salad
Troika salad recipe with eggplant for the winter can be found, probably, in almost all housewives. Suchtwist is considered classic. They named it so because when harvesting one can per liter, the amount of each of the products is three. For example, three tomatoes, three bell peppers, three zucchini or eggplant. The cooking process of Troika salad will take approximately one hour.
On the eve of the day of preparation of the Troika salad or earlier, as it suits you, you need to thoroughly wash the jars of baking soda and then sterilize them. Follow the same procedure for the lids. By the time they are filled, the jars should be clean and dry.
- It is desirable to select all vegetables for Troika salad of medium size. Take the eggplants first and wash them well. Then use disposable kitchen towels to dry them and cut off their tails.
- Then eggplant must be chopped. This can be done in three ways. The first is to cut them into circles, the thickness of which should not exceed one centimeter. The second is to cut each circle in half and get semicircles. And the third - just cut them into cubes. The only difference is that the cubes will boil a little harder.
- Next are zucchini, which should also be washed and dried well before chopping. Then cut them into cubes, one and a half to two centimeters in size. For salad, you can use both young and overripe zucchini. Only overripe ones need to cut the skin and clean out the seeds.
- Wash the tomatoes, put in a saucepan and pour boiling water for one minute. Then remove the film from them, cut out the seal and cut into four identicalparts.
- Bulgarian pepper for the brightness of the salad, you can take different colors. Rinse it, cut off the tail, then cut into two identical elongated parts. Remove seeds, chop into strips or cubes.
Now you can move on to the most important part of making Troika salad.
Start canning
- You need to take a pot with a thick bottom. Add oil and vinegar. Then add s alt and sugar. In no case should you use extra s alt or iodized s alt for canning.
- Mix oil, s alt, vinegar and sugar and layer vegetables on top of the pan. Put the tomatoes on the bottom first. Then evenly spread a layer of eggplant, on top of which place zucchini. And put the bell peppers in the pan last.
- Put the pot with the vegetables laid out in it on the stove at minimum heat. Cover with a lid and wait until it boils. And from now on, simmer them for forty minutes.
- To prevent the vegetables from sticking to the bottom of the pot, they sometimes need to be gently stirred.
- As soon as the vegetables for the Troika salad are ready, remove the container from the stove and immediately place them in a jar and roll them up.
- So that when filling the jar with salad it does not crack, it must be held over the steam. Be sure to wrap the jar with a blanket and leave it to cool for twelve hours.
The amount of ingredients in this Troika salad recipe is calculated for one liter jar.
"Troika": spicy salad for the winter
This salad will be a little differentfrom the previous one. Ingredients:
- Onion - 3 pieces.
- Chili pepper - 1/3 part.
- Tomatoes - 3 pieces.
- Garlic - 3 cloves.
- Carrots - 3 pieces.
- Allspice - 6 peas.
- Bulgarian pepper - 3 pieces.
- Oil - 100 milliliters.
- Eggplant - 3 pieces.
How to make a salad
To prepare the Troika winter salad, all vegetables will need a little preliminary preparation:
- You need to take a sweet bell pepper, you can color it, wash it and cut it into two halves in length. Then remove the insides from each part and cut them into thin long strips.
- Eggplant, like all vegetables, wash well and cut into slices, about one centimeter thick. Put them in any suitable container and lightly s alt. Mix eggplants with s alt and set them aside for twenty minutes.
- Peel the carrots, then wash them very well and chop them into thin strips.
- Rinse the tomatoes, pour over with boiling water, peel off the films and cut into fairly large pieces.
- Separate the onion from the husk, rinse it under running water and chop coarsely.
- Peel the garlic cloves and push through the garlic press. Finally, drain the resulting juice from the eggplant.
- Now you need to take a cauldron, pour oil into it and put on fire.
- Once the oil is hot, add the onion and fry for about seven minutes.
- Add all other vegetables to the onion and afterboil reduce heat.
- Sprinkle s alt and sugar, as well as allspice and simmer for forty minutes.
- Stir the vegetables while stewing. After thirty minutes, add garlic and chopped chili peppers to the cauldron. Stir and simmer the vegetables until the end.
- At the end of cooking according to the recipe, put the Troika salad into previously prepared jars, put lids on top and sterilize for another thirty minutes. Then roll up the jars with lids and be sure to turn them upside down.
- Cover with something dense and do not touch the blanks until they cool completely. The amount of vegetables needed for this recipe makes three half-liter jars of salad for the winter.
Two simple salad recipes for the winter with eggplant and zucchini help to prepare a tasty and satisfying preparation that goes well with many dishes. "Troika" is prepared very simply, little time is spent, but the finished workpiece will delight you throughout the winter.
