It is well known that the tradition of cooking dumplings with meat comes from the city of Poltava. Every year, mass events dedicated to everyone's favorite dish are organized here. At the festival, you can taste flour dumplings, supplemented with vegetable, fruit, and berry fillings. However, dumplings with meat are still in the greatest demand, the recipe of which will be discussed later.

Traditional dish prepared as follows:

  1. Sift wheat flour in the amount of 500 grams. Add a dessert spoon of soda and a pinch of s alt. About 350 grams of kefir is poured into the container. Ingredients combined with chickenegg.
  2. Knead the dough thoroughly so that the product is dense according to the consistency. The base of the dish is covered with a towel and left alone for about 40 minutes.
  3. Boil half a kilogram of pork. The meat is ground with a meat grinder. Add s alt and pepper to taste.
  4. Several large onions are peeled. The ingredient is crushed and then sautéed in a frying pan using vegetable oil. Fried to a light golden hue, the onion is combined with minced pork.
  5. The dough is rolled out with a rolling pin in a thick layer and divided into small dumplings. The pieces are formed into round cakes. A meat ball is placed in each blank and the edges of flour products are connected.
  6. Dumplings are placed on the steamer grate. Space is left between each meat dumpling so that the pieces do not stick together during cooking.
  7. The dish is cooked for 10-15 minutes. Then dumplings with meat are sent to a capacious container. The dish is poured with warmed butter.

Consider a variation of the dish with the addition of potatoes. Take beef or pork meat on the bone. The product is boiled together with onions and carrots. When the ingredients are half cooked, 5-6 medium-sized potatoes cut in half are placed in a container.

Sift 800 grams of flour. S alt and egg are added here. A dense dough is kneaded, and then rolled out with a thickness of just over one centimeter. The workpiece is cut into strips, which, in theirturn, divided into small dumplings.

The finished meat and potatoes are poured into a plate. Discard carrots and onions. The remaining broth is left in a saucepan, where previously prepared dumplings are boiled.

Pour a little vegetable oil into a hot frying pan and fry a tablespoon of tomato paste for several minutes. After cooling to room temperature, a couple of cloves of garlic are squeezed into such a sauce.

Dumplings, boiled potatoes and meat on the bone are placed in a large dish. The dish is served with the addition of broth and tomato-garlic sauce.

450 grams of wheat flour are sifted into a capacious container. Throw a pinch of soda and s alt here. Break a chicken egg and pour in half a liter of kefir. The ingredients are thoroughly mixed until a homogeneous consistency. They form a rather tight, but at the same time elastic dough.

Cut into small pieces 400 grams of chicken fillet. Grind a large onion and 300 grams of champignons. The ingredients are lightly fried. Add s alt and pepper to taste.

Dumplings no larger than 2 centimeters are formed from the dough. Flour products are boiled in s alt water. Ready dumplings are placed on a spacious dish. Lay out a frying of meat, onions and mushrooms on top. Sour cream is used as a sauce.

About 300 grams of chicken fillet is boiled in a liter of water. Grated carrots are fried in a frying pan. Cut into cubes a few medium potatoes. The ingredients are sent to the pan with the chicken meat and boiled for 15 minutes.

Take 4-5 tablespoons of flour. A chicken egg is broken here, a mixture of herbs is added. Everything is thoroughly mixed. Pieces of dough are taken with a spoon and thrown into a boiling broth. The dish is brought to the condition for 5-7 minutes at low heat. Ready-made soup with meat dumplings is poured into deep bowls and garnished with parsley.

Bring about 2 liters of water to a boil. 3-4 small potatoes cut into cubes are thrown here. Add grated carrots and onions. The ingredients are boiled over moderate heat for 10-15 minutes.

Prepare the dough by combining a glass of sifted flour, chicken egg, s alt and ground pepper. Smoked sausage chopped into cubes in the amount of 300 grams is fried in vegetable oil. After the appearance of a light crust, the product is sent to a saucepan with broth from potatoes, onions and carrots. With hands or a spoon, small dumplings are torn off from the dough and also thrown into boiling water after the sausage. The soup is s alted and peppered. The dish is cooked for another 10 minutes.

Dumplings with chicken

Chicken carcass is thrown into boiling water and boiled until tender. The meat is taken out of the pot. The broth is poured into a container of a suitable size. Grind the carrots on a grater, cut the onion into small cubes. The ingredient is placed in the broth.

Sift 5-6 tablespoons of flour. Pour in the chicken egg. Add 50 grams of butteroils. Prepare the dough, the consistency of which is similar to thick sour cream.

Put another pot of water on the stove. Dumplings are formed from the dough with a spoon and thrown into boiling water. Ready flour dumplings are removed from the water, and then transferred to a container with broth. The dish is flavored with herbs and ground pepper. Boiled chicken is cut into small pieces in a deep plate. Broth with dumplings is poured here. Food is served at the table.
