- Wrap the processed loin in foil and refrigerate for 8 hours.
- Get it out half an hour before the start of the main work so that it warms up to room temperature.
- Place the meat on the wire rack and put it in the oven for three quarters of an hour. Inside, the temperature should already be around 150 degrees.
