When minced meat is in the freezer, the question of what to cook from it does not arise: most often the choice falls on cutlets or meatballs. Sometimes naval pasta is the priority. But there is a great alternative to these meat dishes, which will help diversify the home menu - meat bread. Baked in the oven, it goes perfectly with any side dish and is perfect for a hearty lunch or a delicious dinner with the family. Cooking it is no more difficult than cutlets, even, probably, easier. And the products that will be required for such a dish can be found in any store.

What is this dish?

In essence, it is a large cutlet baked in the oven in the form of a loaf of bread - a “brick”. The dish is not difficult to prepare, but it will take a lot of time, about a couple of hours, from preparing the food to serving it on the table. It is prepared from minced meat, usually from beef or pork. But you can take any other meat. Ready mealcut into slices and in this form is served on the table. Pairs best with buckwheat, rice, pasta and mashed potatoes.

What ingredients do you need to make a meat dish?

Additionally, you can use a wide variety of products and any minced meat, as mentioned above, even a combination of several types, for example, pork and beef. But now a certain recipe will be considered, according to which the meat turns out to be very tasty. It includes the following ingredients:

  • pork tenderloin without fat - 550g;
  • beef heart - 350g;
  • bell pepper - 160 g;
  • fresh or frozen champignons - 400 g;
  • onions - 1 large or 2 medium heads;
  • chicken egg - 2 pieces;
  • garlic - 5-6 cloves;
  • s alt and ground paprika - 1 teaspoon each;
  • ground pepper mix - 1 pinch each (for meatloaf, you can use the prepared mixture in the mill, for example, "4 peppers" from Kotanyi);
  • potato starch - 1 heaping tablespoon;
  • ketchup or tomato paste - 2tablespoons;
  • breadcrumbs - 2-3 tablespoons;
  • vegetable oil - 1-2 teaspoons;
  • ground nutmeg - ½ teaspoon.

In addition, you will need aluminum foil and a baking dish. Instead of breadcrumbs, crumbled rye or wheat bread is allowed. You can add more various savory and sweet seasonings, such as Provencal herbs, cumin, rosemary, mustard. If desired, chopped dill and parsley are added. Similar to adding food, you can exclude mushrooms or peppers if they are not available.

Onions and garlic need to be peeled. Remove seeds from pepper. Cut the vegetables so that they fit in a blender, and chop, turning them into a puree. It is better to make minced meat yourself, because the purchased one is often too liquid, and a dense mass is needed for this dish. Wash the meat and cut into pieces. Then wash the mushrooms, cut each mushroom into 4 parts. Transfer to a dry frying pan, turn on a large fire and wait until all the liquid has evaporated from them.

Prepared meat together with champignons must be passed through a meat grinder. Add all prepared spices to this mass, mix. Then eggs, tomato paste, starch and breadcrumbs are introduced into the minced meat. The base for the future dish is again well mixed so that the ingredients are evenly distributed.

Before sending the form with minced meat into the oven, the oven must be heated to a high temperature. It is better if it is 200-220 degrees. Meatloaf in the oven is cooked for about an hour and a half. At lower temperatures, this time will increase.

Other options for cooking meat dishes

There are several more recipes, but there are no fundamental differences from the cooking method described above. For example, there is a very simple option, which includes pepper. It requires the following products:

  • 600g minced meat;
  • 1 egg;
  • 120 ml milk;
  • 1 sweet pepper;
  • ½ teaspoon paprika and s alt each;
  • 2 tablespoons vegetable oil;
  • a pinch of allspice.

In this variant of the preparation of meat bread, the greatest attention is paid to bell pepper. It must be washed, greased with vegetable oil, put in a frying pan and baked in the oven for about 15 minutes at 180-200 degrees. Then cool the vegetable, remove the skin from it and cut it in half. Remove seeds and core, then cut into cubes.

Put the prepared minced meat in a wide bowl, add the egg, milk and pepper, and then beat with a mixer or blender. Then add s alt and spices, mix. Pour the mixture into an oiled mold. Also, from the resulting mixture, you can form a brick, pack it in foil and bake in thisform. The oven must be heated to 200 degrees. The meat is baked for half an hour, then you need to open the edges of the foil and cook for another 20 minutes.

Another meatloaf recipe combines 3 types of meat. To prepare a dish, you need to prepare:

  • 450g ground beef and 230g each minced pork and veal;
  • 6 strips of bacon;
  • 2 eggs;
  • 25 g each of butter and finely chopped parsley;
  • 1 finely chopped onion;
  • 2 cloves minced garlic;
  • 50g each of breadcrumbs (breadcrumbs), chili sauce or ketchup and finely chopped celery;
  • 30g chopped dried basil;
  • half teaspoon each of thyme, s alt and ground pepper;
  • 2 tablespoons of Worcestershire sauce.

Heat butter in a frying pan over low heat, add onion, garlic and celery. Cook, stirring constantly, until the vegetables are soft. It will take approximately 8 minutes. Put the food in a bowl, add minced meat, eggs, herbs and spices, in general, all other ingredients except bacon. Mix well. Transfer the mince to a baking dish. Ideal for a special dish for baking bread. Tamp down the meat, lay the bacon strips on top and send the dish to the oven. As in previous recipes, it should be well heated, up to 200-220 degrees. The dish is cooked for about an hour and a half. It is recommended to periodically grease the top so that it does not burn. When the "bread" is ready, get it out ofoven, drain the fat and let stand at room temperature for 10 minutes. Cut the meat into portions and serve.
