Eggplant, milk zucchini and squash are ideal for cooking this dish. You can also take peppers and tomatoes (not juicy, but fleshy varieties).

It must be said that the time for which you can get the finished dish depends on the type of vegetables andcooking methods. When using a grill pan, it is enough that each piece is to be fried for 3 minutes on each side. For those who like slightly raw grilled vegetables, a minute is enough. For example, eggplants themselves are tender and after a few minutes of being on a plate they still become soft. They can be served with mayonnaise, and if you like zucchini more, then it is better to eat them with sour cream, although it all depends on individual tastes.

Grilled vegetables at home are easy to cook in the oven, but provided that it has the appropriate function. Before you start frying, the oven tray must be covered with foil, previously lubricated with oil. Only after that you can lay out the vegetables, which should be cut into medium or even large pieces.

If desired, a special sauce can be used during the preparation of grilled vegetables. To do this, mix olive oil, garlic, soy sauce, vinegar, as well as s alt, pepper to taste, then pour over the vegetables with the resulting solution and put in the oven.

For a more satisfying meal, you can use the following recipe.

Take one potato and a medium-sized zucchini, cut everything into slices and bake for 20 minutes in the oven. Separately, fry the onion, cut into rings. Mix Art. l. olive oil and balsamic vinegar (2 tablespoons), half a teaspoon of lemon, and tbsp. l. honey and minced garlic clove.

The resulting sauce should be poured over vegetables, seasoned with s alt and pepper, as well as fresh sage(it can be replaced with any greens that you like). Mix everything, put in layers on foil, put onion rings on top, wrap everything tightly. Cook at 150°C for about 40 minutes. The dish is ready when the potatoes are soft.

According to this recipe, you can cook grilled vegetables not only in the oven, but also on the grill. At the same time, you don’t need to fry them first, you can just pickle them in the sauce.
