So: salad with duck - to your attention! To some people, such meat seems too fatty, but all this can be attributed to various parts, except for the sternum. Of course, such a fillet will be darker and fatter than the same chicken, but at the same time the taste will become more tender, and the duck salad itself will be juicier. Well, let's try to cook?

A little about the meat itself
Duck flesh is quite oily, soit is better to season the salad with a spicy composition. Vegetables are also a great addition to this main ingredient. Salads with various sour fruits are popular in various cuisines: blue plums, pomegranates, figs, oranges and tangerines. In fact, a duck salad is a satisfying product, nutritious and he althy at the same time, regardless of what ingredients are added to it as auxiliary ones. Duck meat is also very specific: the smell, the taste. Therefore, it may not be combined with every product. As for dressings, the duck salad loves the combination of balm vinegar and vegetable (olive or other) oil. You can also use lemon, lime, orange juice. And now - the recipe.
Salad with duck. Recipe with ginger
To prepare it, we need: 200 grams of duck meat (breast), vegetable oil, ginger - grated, fresh, red hot chili pepper in the amount of 1 piece, blue onion, a little soy sauce, celery, zucchini, sweet peppers, 2-3 large blue plums, Chinese cabbage - 200 grams, fresh cilantro - 1 bunch.
Preparing a hot snack
- First cut the duck fillet into small pieces.
- Ginger (root) clean and finely grate. Chili cut into strips.
- Pour vegetable oil into a frying pan, heat well. Spread the pepper, ginger and chopped duck. Fry over high heat for 3 minutes to “golden” the meat.
- Peel and finely chop the onion. We cut sweet pepper into slices (or half rings, straws - as you like). Celerycut into half rings. We put all these ingredients in a pan, fry a little more.
- Zucchini cut into strips. Cut the plums, remove the pits and cut into slices. Add zucchini and plums to the pan, pour in soy sauce, stirring, fry for a short time.
- Shred cabbage and cilantro, put in a pan to the total mass. Bring to a boil and turn off. Let it brew for 15 minutes.
- Serve hot (warm) on the table, garnished with fresh herbs, tangerine slices.
Smoked duck salad
To prepare it, we need: 200 grams of smoked duck fillet (breast), a bunch of young spinach, a couple of sweet and sour apples, olive oil, mustard with grains, balm sauce, honey, a few nuts (preferably pine nuts), pepper + s alt (you can use a mixture of peppers).
Cooking the dish
- Cut the smoked breast into thin slices.
- Apples cut into thin slices or strips.
- Mix mustard with honey and olive oil in a bowl, add balsamic sauce to the mass, s alt and pepper.
- Mix apple straws with slices of duck meat, add spinach leaves, season, mix. Sprinkle the salad with crushed nuts.
With oranges
Salad with duck and oranges is an excellent and refined delicacy with oriental roots. We will need: duck breast, lean (preferably olive oil), lettuce, red onion, orange. And for dressing a delicious and unusual salad: a spoonful of soy sauce, 3tablespoons of vegetable oil, 2 tablespoons of orange juice, a little grain mustard, spices as peppers, s alt.
Cooking easy
- My breast and dry it. We make cuts on the skin, not to the very end. Mix oil with s alt, pepper. Marinate the breast in this mixture, setting aside for 15-20 minutes in a bowl.
- My lettuce leaves, dry from excess moisture.
- Peel the orange, remove the films so that only the pulp comes out.
- Cut the onion into half rings.
- Heat the frying pan well. Put the breast skin side down, fry quickly until golden (on both sides).
- After that, put the breast into a baking dish and bake in an oven heated to 190 ° C for about 10 minutes. Then cut the fillet into cubes.
- Put lettuce leaves on a plate, top with pieces of duck fillet and orange slices, chopped onion.
- Top with lettuce leaves.
- For dressing, mix the above ingredients and pour over the dish.
Take a pear
Duck and pear salad is a great choice for a festive table. We will need: a couple of medium duck fillets, a large pear (or several small ones), one hundred grams of feta cheese, 2 bunches of arugula, a mixture of peppers and s alt. To season: a few tablespoons of vegetable olive oil, the same amount of balsamic vinegar, juice from half a lemon, pepper and s alt to your taste.
Cooking
On the skin of the fillet, make a few shallow cuts. S alt, pepper. Let's fry onlow heat on both sides (5 minutes each). Transfer to a plate, cover with foil and let stand for a while. Meanwhile, let's prepare the sauce. To do this, mix the above ingredients in a bowl and beat until foamy. Cut the pear into thin slices. Feta crumble coarsely by hand. And cut the duck fillet into small pieces. Next, put the arugula in the plates, add the cheese with the pear, put the chopped fillet on top.
