Required ingredients:
- 250 grams of mascarpone.
- 75 grams of sugar.
- 3 yolks.
- 120 grams of biscuit cookies.
- 2-3 teaspoons of instant coffee.
- 3-4 tablespoons brandy.
- A tablespoon of cocoa.
Preparing coffee: instant coffee (2-3 teaspoons) for two hundred milliliters of boiling water). Cool, pour into a deep bowl, add brandy or Amaretto liqueur. Beat the granulated sugar with the yolks well until the sugar dissolves. Gradually introduce mascarpone into this mass and stir until a homogeneous thick mass is obtained.

Homemade Tiramisu
Required ingredients:
- Mascarpone - 250 grams.
- Savoiardi cookies - about twenty pieces.
- Espresso - 250 milliliters.
- Heavy cream - 250 ml.
- Amaretto liqueur - five tablespoons.
- Sugar - three canteensspoons.
- Eggs - two pieces.
- Cocoa powder - teaspoon for sprinkling.
Pour four tablespoons of Amaretto into a bowl. In another bowl, beat half the sugar with the yolks until you get a light, homogeneous mass. Add in the mascarpone and whisk. Take the third bowl and whip the cream there, add the cheese cream and mix everything gently.
With half the sugar remaining, beat egg whites at room temperature until stiff. Mix egg whites with cream cheese, add Amaretto and stir.
In a high rimmed dish, place the savoiardi, moisten it a little with the mixed liqueur and espresso to wet it. Put and smooth a layer of cream on top. Repeat this procedure: first cookies, then cream. Cover the finished tiramisu with cling film and refrigerate for at least two hours. Cooled "Tiramisu" cut into pieces and place on a plate. Take a saucepan and a colander. Gauze must be folded five times to get a dense structure. Place a colander on the pan and put cheesecloth on the bottom. Lay out the chilled sour cream in a slide. Fatty sour cream will make fatty cheese. If the sour cream is low-fat, then there will be a lot of whey, but there will be little mascarpone. The resulting whey can be used in pancake or pie dough. Please note that sour cream should bevery fresh. Tie the cheesecloth very tightly so that it seals well. Place a heavy object weighing 2-4 kg on top. Put it all in the refrigerator for three days.
