In our article we want to talk about the Italian dessert tiramisu. Many housewives are afraid to prepare tiramisu cream at home. And it’s completely in vain, it’s not that difficult. But what a result! Let's look into the nuances of cooking.
Cream for tiramisu with mascarpone: ingredients
Tiramisu is the most beautiful dessert, however, high-calorie. The classic recipe requires the use of two products that are not always found. It's mascarpone cheese and savoiardi biscuits. If you cannot find them, then in principle, mascarpone can be replaced with non-acid fatty homemade sour cream. But with cookies, the situation is more complicated. You can try dry biscuit instead of savoiardi, but it certainly won't be quite the same effect.
To make cream for tiramisu, we need ingredients:
- Powdered sugar – 80g
- Savoiardi cookies - 30 pcs
- Mascarpone (cheese) - 250g
- Chicken eggs - 2 pcs.
- Coffee (preferably strong) - 200 ml.
- Coffee flavored liqueur - 4 tbsp.l.
- Cocoa - 80g
Cream tiramisu preparation
Tiramisu cream with mascarpone is not that difficult to prepare.
Mascarpone should be put in a wide bowl and beat until smooth with a whisk or spatula. The cheese should have a soft creamy texture.
Next, you need to separate the whites from the yolks. In a separate saucepan, beat the icing sugar with the yolks until white. Slowly add the resulting mass to the mascarpone, without ceasing to beat with a whisk.
Next, mix four tablespoons of rum with cold strong coffee. To do this, take some kind of wide dishes with low edges. The container should be comfortable. We will dip cookies in it.
Take the savoiardi and dip it into the rum-coffee mixture. Then we put the soaked cookies on the bottom of the mold, and pour the third part of the cream made from mascarpone on top. Next, take the second portion of savoiardi, dip them into the liquid and lay them in a dense layer on the cream. Pour the mascarpone on top again and lay the cookies. Fill the top layer with the rest of the cream. You can gently tap the sides of the mold so that the inner layers even out and the savoiardi sinks into the cream. Next, the dessert should be refrigerated for at least three hours, and best of all overnight.
Before serving tiramisu, cocoa is sprinkled on top. It is better to do this through a sieve, then there will be no lumps on the surface of the dessert.
Cut tiramisu with a thin sharp knife and arrange on plates. Dessert mustthaw slightly at room temperature.
Tiramisu without eggs
If you wish, you can make a cream for tiramisu without eggs.
Ingredients:
- Mascarpone - 0.5 kg.
- Cream (at least 33% fat) – 170-180 ml.
- Powdered sugar - 120g
- Coffee natural (brewed) - one cup.
- Amaretto or cognac - 2 tbsp. l.
- Savoyardi – 20 pieces
Pour chilled cream into a cold bowl and beat it with powdered sugar. White peaks should form. Whipped cream is added to the mascarpone in small portions. Next, knead the tiramisu cream until smooth.
Let's make natural coffee and let it cool down. Add to it, if desired, amaretto or other alcoholic drink. Dip each savoiardi cookie into the liquid. You need to do this quickly so that it does not get too wet.
Put a layer of cookies on the bottom of the mold. We apply cream for tiramisu on it, and then again savoiardi. Next, lay out the second part of the cream and level the surface. Sprinkle cocoa or grated chocolate on top of the finished dessert. Then put the tiramisu in the refrigerator so that the savoiardi is soaked with cream.
Tiramisu cream without mascarpone
If you haven't found mascarpone, you can cook tiramisu without it.
Ingredients:
- Sugar - 300g
- Chicken eggs - 8 pcs
- Wheat flour - 130g
- Cream (fat only) – ½ l.
- Milk - 100g
- Gelatin - 1 tbsp. l.
So, let's start cooking with savoiardi. If you could not find it in the store, then you can cook something similar at home.
Four yolks should be beaten with sugar (200 g). Whisk the egg whites with the juice of half a lemon until white peaks form.
Next, add flour (120 g) to the yolks. Add whipped egg whites to the same mixture. Here is our cookie dough and ready. We cover the baking sheet with parchment and spread the dough on it with the help of a pastry bag. Cookies need to be shaped into sticks. Sprinkle a little powder on top of them and send them to the oven.
Once the cookies are done, you can start making the tiramisu cream.
Gelatin (a tablespoon) should be dissolved in milk (100 g). Beat the yolks with sugar. Gelatin must be heated in a water bath until dissolved, and then add the yolks with sugar to it.
In a separate bowl, beat two proteins with vanilla and add them to the yolks. In a saucepan, start whipping the cream, and then gradually add the egg mixture, while not stopping to stir.
Now that all the ingredients are ready, you can proceed to the preparation of dessert.
Take the shape and cover with cling film. Let's make strong coffee, and be sure to natural. Put a couple of centimeters of cream on the bottom of the mold, and put a layer of cookies on top of it. And do not forget to dip each biscuit miracle in chilled coffee.
Next, lay out a layer of cream again, and again - cookies. Then we put the tiramisu in the refrigerator for the whole night. Abovedessert can be decorated with cocoa and whipped cream.
Tiramisu cake: ingredients
Tiramisu is an exquisite dessert. It can be served in portions, or it can be prepared in the form of a cake.
Cream for "Tiramisu" cake is made according to one of the previously mentioned recipes. You can choose any option you like.
Ingredients:
- Mascarpone - 0.5 kg.
- Cold espresso - 300 ml.
- Powdered sugar - 5 tbsp. l.
- One glass of Marsala wine (sweet). You can also use a few spoonfuls of cognac or amaretto.
- Savoyardi - 200 g.
- Cocoa, dark chocolate.
Preparing the Tiramisu cake
Whisk the whites into a thick foam. To make the foam more resistant, at the end you need to add powdered sugar. The strength of the foam determines whether the cream will flow or not.
Yolks in a separate bowl are beaten white with powdered sugar. Next, mascarpone is added to them and mixed thoroughly. Then gently beaten egg whites are added to the cream and mixed.
Add alcohol to cold coffee and dip alternately into the savoiardi mixture. We spread the bottom of the cake mold with moistened cookies, apply a thick layer of cream on top. Then the next layer of savoiardi. We put the rest of the cream on it. If you want to decorate the cake festively and elegantly, then you can also decorate it with cream on top using a pastry bag (use the "star" nozzle). Sprinkle cocoa on top of the finished dessert.
Preparing such a cake at home does not require baking. And at the same time, it does not compare with other desserts for a quick hand like the Potato cake. This delicious delicacy with divine taste will decorate any holiday table.
