  • flour - 500 g (+ a little for dusting, on the table);
  • sl. butter (softened margarine) - 250 g;
  • powder - 100 g;
  • lemon zest (optional)
  • eggs (chicken) - 2 pcs.;
  • some milk.

Preparing dough

Sift the flour into a deep bowl, then add the butter to it. Great-grandmother Jamie had a golden rule: take flour and fat for shortcrust pastry in a 2: 1 ratio. Sift the powdered sugar into the flour and butter mixture. We rub the ingredients very quickly with our hands until uniform golden lumps. In the mass, you need to make a small depression, pour in the eggs and gently, with your fingers, mix the yolk with the protein. Shortcrust pastry should not be kneaded too long, as it can drag on, products from it will be heavy and will not bake well. Roll up a ball from the finished mass, wrap it on all sides with cling film and place in the refrigerator for half an hour.

For dark dough

  • sl. butter - 160 g;
  • powder – 75;
  • zest 1/3 tsp;
  • s alt;
  • cocoa - 30 g;
  • vanilla essence 5 ml;
  • yolks (chicken) - 2 pcs.;
  • flour - 200g

First, prepare the dough without cocoa. Combine butter, zest and powdered sugar and mix with a mixer. Add essence and yolks, beating after each addition of products. Lastly, add s alt and flour. Knead the dough. We divide it into four equal parts, roll each into layers measuring 10 x 15 centimeters, wrap it in cling film and put it in the refrigerator.

Chocolate dough is prepared in a similar way. We divide it into two parts, roll it into layers of the same size as the light ones, and also remove it in the cold. We are waiting for our dough pieces to “freeze” a little and roll out well. We take out three light and two chocolate layers from the refrigerator. We roll them intorectangles 3mm thick.

According to the recipe, shortbread dough is laid alternately: starting and ending with light layers. We twist into a roll, press down a little. Fold it in half again and press down again. We give the roll the shape of a log. We take out the remaining light-colored layer from the refrigerator, roll it into a rectangle and wrap our logs in it. We wrap it in a film and put it in the freezer so that it freezes a little and is easier to cut.

Cut 5 mm thick medallions from chilled dough. Place them on a sheet lined with parchment paper. By the way, you can use a silicone mat. Bake for 10-12 minutes at 180 ° C, let cool a little and invite loved ones to tea.

Knead shortbread dough from products, divide into two identical parts. We roll it out between two silicone mats and put it in the refrigerator in this form so that it freezes a little. The exposure time in a cold place should not be less than one hour. Let's prepare the nuts: we clean them from the shell, fry a little and knead with a knife or a rolling pin into large crumbs. We take out dough blanks from the refrigerator, roll them up a little more so that the thickness is 8 mm. After that, with a special form with a diameter of 10 cm, we begin to cut out the rings. When everyone is ready, cut out the middle with a small notch.

Brush several rings (all at once is not recommended) with beaten egg and alternately turn the greased side into a plate with crushed peanuts. In this case, they should be pressed a little, and then laid on a baking sheet covered with a silicone mat. Perform the same manipulations with the rest of the blanks. We put the products in a preheated oven to 180-190 ° C and bake for about a quarter of an hour, the time depends on the thickness of the dough and the characteristics of the oven. Cool the baked sand rings a little and carefully remove from the sheet.
