How to cook

Chicken and cheese salad prepared according to the traditional principle. The only exception, as we have already noted, will be in the use of chicken meat, and not canned fish. To begin with, we put the chicken fillet to boil. It is important that the chicken meat be thoroughly washed under cold water and cleaned of skin and films before cooking. The meat is cooked very quickly (20-25 min.) in s alted water with the addition of bay leaves and peppercorns.

Dip chicken eggs in cold water and put on fire. As soon as the liquid boils, we look at the clock and note eight minutes. This will be enough for the egg to cook, but not lose its rich color in the yolk. Cut the onion into very small pieces. Grind the cheese with a grater.

When the boiled chicken is removed from the water, it needs time to cool. Cut the cold chicken breast into long strips. You can even disassemble the meat into fibers with your own hands. After cooling the eggs, separate them into whites and yolks. Do not forget to leave one protein andone yolk to decorate the salad.

Assemble layers of Mimosa salad with chicken. In the "fish" version, boiled potatoes are sometimes used as a substrate. But in our case, we did not use this ingredient, so the chicken fillet will be the first layer of the salad. S alt the layer a little and coat with mayonnaise. Place the onion over the meat. After this layer, mayonnaise can be omitted. Cheese is next on the salad. And again, do not forget about the mayonnaise. Grind a few eggs on a grater and add them to the salad. Mayonnaise again.

You can even add a pinch of s alt to the water to make the eggs easier and faster to peel after boiling.

While everything boils and gurgles on the stove, chop the onion. It should be crushed hard enough so that a slight onion flavor is present in the salad, and large and rather sharp-tasting pieces do not fall on the tooth. Smoked chicken fillet should be cut into sticks or thin long strips. The thinner the meat, the more tender the salad will be.

If possible, make your own mayonnaise. While eggs and potatoes are being cooked, there will be plenty of time for this. Take a couple of chicken eggs (preferably homemade), break them into a deep container. Add a teaspoon of mustard, a pinch of s alt, a little ground pepper to the eggs. Mix with a blender. Leaving the whisk in the container, begin to gradually pour in the vegetable oil. The more oil, the thicker the product will come out.
