for test:

  • 250g cottage cheese (preferably soft);
  • 200g sl. oil;
  • 250 (+ some extra) flour;
  • egg;
  • 4 tbsp. l. sugar;
  • 0.5 tsp soda;
  • 3 tbsp. l. rast. oil;
  • 0, 5 vanilla sugar.

for stuffing:

  • 4 apples;
  • 5 tbsp. l. sugar;
  • 0.5 tsp cinnamon.

Dough kneading

Combine together cottage cheese, sugar (sand and vanilla), melted butter, beat everything with a mixer or blender. Pour the egg and vegetable oil into the mass, mix and add soda. Thanks to the last ingredient, the dough will become porous. Lastly, flour is added and a plastic “obedient” dough is kneaded. We roll it into a kolobok and wrap it with cling film, let it rest for about 15 minutes.

Cooking

For baking, wash the apples well under running water, remove the core and cut into thin slices. It should be remembered that if the apples are cut into thicker slices, they will not have time to bake. From this amount of dough and filling, you can make two pies or one large one. We roll out the dough into a large even rectangle, visually divide (along the length) it into three identical parts. We cut the two side parts into even or oblique strips about one and a half centimeters wide. In the middle we put apples in two or three layers and sprinkle with sugar. We braid products with the help of side stripes in the form of a braid. The cake is baked for half an hour at 200 degrees in the oven. Baking with apples is still hot, sprinkled with powdered sugar, you can serve it on the table as inwarm or cold.

For the dessert we will use vanilla dough, and for the filling - apple jam or jam. The cookies are tasty, crispy and have a beautiful elegant appearance.

Soft butter is rubbed with sugar and vanilla, add the egg to the mass and mix. Lastly, we introduce the sifted flour with baking powder into the dough, knead and leave for 30 minutes, covering it with a napkin. We roll the dough into a ball, divide it into four parts, take one for work, and put the other three under a napkin. We roll out the fourth part into a thin circle and divide it into six sectors. We make parallel cuts along the edges of the sector, stepping back a little from the edge, leaving the middle intact: we will lay jam on it. I put it in one teaspoonful. We cover the filling with one of the sides, fix it with our hand and overlap it with the rest and also fix it slightly so that the product is more airy.

Place the baked goods prepared according to the recipe with apples in a mold or a baking sheet and put in the oven forquarter of an hour at 200 degrees. We proceed in the same way with the rest of the test. For the filling, you can also take apple jam, but it is better to make each part with a different filling.

French cuisine dessert

We offer a very interesting and unusual dessert prepared according to a French recipe - apple crustade. The dough that is used for this pastry with apples is called filo and refers to the type of protracted. It is not very easy to prepare at home, it is better to buy it in the store. But if you want to cook it yourself, we will present the recipe below.

Filo dough

500 grams of flour, together with a teaspoon of s alt, is sieved twice through a sieve into a container, six tablespoons of sunflower oil are poured into it. Then warm water (35 degrees) is added to the mass and the dough is kneaded with a wooden spatula. If it gets too thick, add a little water. We spread the dough on the surface of the table and, without adding flour, knead with our hands. After that, we beat the test lump with force several times (15-20) on the working surface. We place the dough in a sealed plastic bag and immerse it in warm water for ten minutes. After this period of time, divide the dough into pieces the size of a small tennis ball. After dusting the table a little with flour, start stretching the dough in different directions, then cover it with a damp cloth and leave it for five minutes.

Separately take each piece and carefully pull it out, it is best to do this on baking paper or a towel. As a result, you shouldget a very thin transparent dough, but it should not tear. The finished layer is smeared with melted butter, another layer prepared in a similar way is placed on it. Depending on how thick the layers are, they are stacked in a pile of 3-4 pieces. The top layer must be smeared. By the way, phyllo dough is too thin and tender, it dries very quickly, so it is extremely necessary to oil the layers well. Despite some complexity of preparation, apple pastries with a recipe that indicates filo dough as an ingredient turn out to be amazing in taste and unusually beautiful in appearance.

Ingredients for apple crustade

  • cognac (rum, calvados) - 1 tbsp. l.;
  • sl. butter - 20 g (10 g + 10 g);
  • sugar - 4 tbsp. l.;
  • apples (medium) - 2 pcs.;

First, let's start with the filling: cut the prepared apples (without seeds and peel) into small cubes and place in a saucepan with already melted butter (10 g) and sprinkle with sugar. Stew apples with sugar for a couple of minutes, pour an alcoholic drink into them and evaporate it for one minute. By the way, alcohol can not be added, but replaced with vanilla. It will absolutely not affect the taste.

Preparing dessert

Crustade will cook in portion molds, and bake pastries with apples in the oven. Cut the round layers of filo dough into four parts (be sure to cover the rest with a damp cloth, as it dries quickly). Place in molds so thatthe edges drooped. Melt 10 g of butter, in the future we will grease the dough with it. We put a piece of dough greased with oil in the mold, put the apple filling on top, the next layer of dough and again the filling, and again a layer of dough. We place the edges of the latter so that they seem to stand and keep their shape well, and from the overhanging edges we make something in the form of a skirt. You need to cook for twenty minutes (until a golden hue) at a temperature of 180 degrees. Sprinkle with powdered sugar and serve.

  • hard apples, red is better;
  • cinnamon - 1 tsp;
  • cane sugar (brown) - 2 tbsp. l.;
  • egg;
  • raisins;
  • carnation - 2-3 pistils;
  • lemon juice.

First, let's prepare the apples: wash them under water, remove the core, and cut the fruit into thin slices. Bring water to a boil in a container, add cloves and a little lemon juice to it. Let's start directly preparing puff pastries with apples: roll out the dough on a floured table and cut it into ribbons 4-5 centimeters wide. Lubricate them with a beaten egg, sprinkle with a mixture of sugar and cinnamon, you can also sprinkle with small, soft raisins. Lay the apple slices overlapping along the top of the ribbon, fold the rosette and place it in a mold, for example, for muffins. Sprinkle with sugar on top. Before sending the pastries to the oven, place the mold with rosettes in the refrigerator,to make the dough more elastic. We put apple sockets in the oven preheated to 180 degrees and bake for about 50 minutes. Before serving, sprinkle pastries with apples with powder and serve hot with ice cream, and cold with hot tart tea. Such sockets can be made not only with various fruits, but also with vegetables, for example, with zucchini.

Separate the yolks from the proteins and beat them with the indicated amount of sugar until a strong stable foam and increase in mass. Beat the whites with a mixer until a fluffy white mass, after adding four drops of lemon juice to them. Very carefully combine the proteins with the yolks and mix. Then we add flour in portions, after each portion we mix from the bottom up. The dough should come out smooth and uniform. We prepare a detachable form with a diameter of 22 cm, grease with oil with a pastry brush and cover with parchment.

We use green apples for baking, preferably sour varieties. Cut into thin slices, lay on the bottom of the mold and fill with dough. Bake for 35 minutes at an oven temperature of 180 degrees. Very originaldessert made from yeast dough with apples. It looks quite unusual and is distinguished by its amazing taste. Prepare food:

Dough:

  • sl. butter (softened) - 50 g;
  • flour - 300 g;
  • cow's milk - 130 ml;
  • yeast - 20 g;
  • sea s alt.

Filling:

  • 3 hard sour apples (large);
  • 50g sl. oil;
  • a pinch of Musk. walnut;
  • 100g sugar;
  • cinnamon.

Be sure to sift the flour, make a dough. After it has stood for a while and increased in size, knead the yeast dough. We remove it in a warm place and leave it until it doubles in volume.
