Seldom someone cooks a dish that they have never seen, tasted or heard how to cook before. In this sense, the recipe described in the article is an exception. Who has not eaten manti? Yes, almost everyone at least once in their life tried, or at least saw a picture of this dish or heard how to cook manti.
We offer you a recipe from Armenian cuisine
This recipe, according to fans of this dish, is very interesting and original. Especially the design (associated with something sweetly delicious), and therefore it is worth paying attention to the filling of manti. The filling of this delicious dish consists of boiled chicken meat, which is often present in the refrigerator of housewives.
To prepare this dish, you must not only follow the instructions and recipe, but fantasy and improvisation will also come in handy, simply because two hostesses with the same ingredients will have a different taste of manti.
An important component in the Armenian recipe is not onlydough, but also properly cooked chicken meat, and golden broth.
Manty boats (traditional Armenian dish)
In the original of this recipe, the dough should be cut into squares with sides of 3 cm, but for some this size may seem too small (irritates the nervous system during cooking), so you can make a slightly larger square (sides of 5 cm)
Chicken stuffing specially prepared for the dish should be juicy, but if it was in the refrigerator or white meat was used, add a little broth to the minced meat.
What you need for the test:
- 300 milliliters of water;
- 1 tablespoon oil;
- 1 tablespoon (15 g) s alt;
- 2 medium sized eggs;
- 500 grams of flour (as much as you need for a stiff dough);
- + 100 grams flour for kneading and rolling.
For stuffing:
- 300 grams boiled chicken, finely chopped;
- 6 tablespoons chicken broth (see recommendations above);
- ¼ teaspoon pepper;
- ½ teaspoon s alt or amount to taste.
For baking and cooking:
- 1/3 cup mixed vegetable and olive oil;
- 1, 500 ml homemade chicken broth.
Garlic yogurt
To serve:
- 240 grams of yogurt;
- 60 grams of water;
- 10-15 grams (2-3 medium cloves) garlic onion, grated;
- ½ teaspoon s alt;
- a pinch of whitepepper.
Cooking method
Flour (500 grams) is mixed with s alt. They make a small depression, pour other products into it: eggs, oil and water. Mix the dough, which is transferred to a floured home dough-working table, and knead it a little more until it is no longer sticky. The mixed dough is formed into a ball, covered with a clean towel and left to rest for 30 minutes.
Preparing the filling: cut the chicken into pieces and season with s alt and pepper to taste. In addition to a small amount of broth, you can add a little (1-2 tablespoons) of olive oil for flavor.
The dough is rolled out on the table in the form of a sheet about 3 mm thick.
Then, using a square cutter, cut into squares. Place a filling on each square and pinch the dough at both ends to make it more boat-like.
All "boats" are laid out next to each other in pallets, greased with vegetable and olive oil. The remaining mixture of vegetable and olive oil is distributed in a thin stream over the surface. Bake in a preheated oven at 180°C. The surface of the "boats" should turn pink, in time it takes about 15 minutes.
Remove from oven and pour over hot broth. Then return to the oven and bake for another 35-40 minutes, or until cooked through with some of the broth.
You can prepare your garlic yogurt during this time. All products are mixed in a suitable vessel until smooth. Keepin the refrigerator until use.
During the heat treatment, the "boats" will absorb most of the broth and become very fragile and tasty. Place them in a deep dish with a portion of the broth in which they were boiled. Each serving is topped with two or three tablespoons of garlic yogurt and served immediately.
