- I'll tell you straight away, eggless pancake batter takes less than five minutes to cook and takes about 10 minutes to fry. You'll end up with 10 pancakes, which is enough for two servings. Mix all the ingredients in one big bowl and mix until smooth.
- Take a frying pan (a pancake frying pan works great as pancakes don't burn, turn golden and are much easier to flip). Lubricate it with vegetable oil and heat over medium heat. Pour in two tablespoons of dough and fry on both sides until a light brown crust forms. Bon appetit!
Like Shrovetide
The following recipe is perfect for a summer lunch or dinner because it uses berries. But you can easily cook these eggless pancakes for Shrovetide with frozen berries or just use jam. Currant jam is best, as it is slightly sour, and in combination with maple syrup, the filling is divinely delicious. Pancakes can be served with warm milk or homemade raspberry tea.
Pancakes with berries
Ingredients:
- 1 cup (just over 150g) flour (mixed with baking powder);
- ¼ cups (55g) powdered sugar;
- ½ teaspoon baking soda;
- 1 cup (250 ml) milk;
- 20g melted (very soft) butter or margarine;
- 2 teaspoons of vinegar;
- 1 teaspoonvanilla;
- mixed berries (you can use whatever berries you like best);
- maple syrup.
Instruction:
- Mix flour, sugar and baking soda in a bowl or saucepan. Make a well in the center of the resulting mixture. Slowly pour in milk, butter, vinegar and vanilla, then mix with a whisk until smooth. There should be no lumps in the dough, otherwise the pancakes will not be very tasty.
- Take a medium-sized frying pan and heat it with vegetable oil. By the way, if you don’t have a pancake pan in your arsenal, then a pan with a non-stick coating is perfect. Pour 3 tablespoons of batter (¼ cup) into the skillet and cook 2 or 3 minutes on both sides (or until golden brown). Repeat the same steps with the remaining test. You will end up with 8-10 pancakes.
- Place pancakes without eggs on a pretty plate. Top with mixed berries and drizzle with maple syrup. Eat and enjoy.
