Roasted cucumber can be made with hot spices. The process can be summarized as follows:

  1. Soak 10 shiitake mushrooms in warm water.
  2. Peel two long cucumbers, ginger and carrots, all cut into strips. Grind the shiitake and one chili pepper in the same way.
  3. Heat a frying pan very strongly, pour a little oil into it (enough for frying). First throw in the ginger and finely chopped 3 cloves of garlic, then after about 30 seconds put the cucumbers,then, with a short interval, carrots and mushrooms.
  4. Taste the vegetables with a pinch of sugar, soy sauce, Worcestershire sauce, mirin or sherry. After that, you need to add sesame oil, add chopped pepper and green onion and fry for about 1 minute.

You can also cook fried cucumber as a side dish for a hot meat dish. For this you need:

  1. Cucumbers (600 g) peeled and divided into 4 longitudinal parts. Season with a marinade of a quarter teaspoon of s alt, half a spoon of sugar and three large spoons of vinegar. The mass should be well saturated with the solution, for this it is better to put the container with the vegetable in the refrigerator.

  1. 300g beef cut into thin strips and fry, lightly s alted.
  2. Chop one carrot and two onions in the same way. Fry vegetables in a separate pan.
  3. Cut cucumbers into circles. Fry also separately. Put in a large container. Add other vegetables and meat.
  4. Sprinkle the whole mass with vinegar (about a third of a teaspoon) and mix with chopped garlic (5 cloves) and pepper (a small spoon). Add s alt if necessary.
  5. Heat 2 large tablespoons of oil (any vegetable) and pour over the salad.
