To begin with, yeast and sugar are diluted in slightly warmed water and left for a few minutes. All knead well until smooth, cover with cling film and clean in heat. The risen dough is punched down and left to rise again. - 200 g sugar (fine crystalline).
- 200g peasant butter.
- 400 g flour.
- A glass of mayonnaise.
- Fresh egg.
- 1 tbsp l. 9% vinegar.
- ½ tsp baking soda.
The butter is thoroughly rubbed with flour. Mayonnaise, a raw egg, sugar and soda slaked with vinegar are added to the resulting crumb. Everything is thoroughly kneaded until smooth, kept in the refrigerator for half an hour, and then they begin to form a pie or cookie.
With honey

The resulting warm homogeneous mass is supplemented with soda, flour, spices and beaten eggs. Everyone mixes thoroughly and proceeds to mold the gingerbread.
With potato broth
From the dough made according to the method described below, incredibly soft and fluffy pies with savory fillings are obtained. To prepare it, you will need:
- 500 ml potato broth.
- 4 tbsp. l. fine cane sugar.
- 6 art. l. vegetable oil (refined).
- 2 tsp yeast (dry).
- ~ 700g flour.
- S alt.
S alted potato broth is heated over low heat. Once it is warm enough, fast-acting yeast, refined butter, sugar, and repeatedly sifted flour are added to it. Everything is thoroughly mixed until a plastic mass is obtained. The finished dough is transferred to a large bowl, covered with a clean linen towel and left warm for a while. As soon as it increases in size, it can be formed into pies.
With oil and water
Choux pastry, a step-by-step recipe for which will be discussed a little later, will be an excellent base forbaking eclairs or profiteroles. To create it you will need:
- 200 ml of settled drinking water.
- 150g white flour.
- 100 g peasant butter.
- 4 chicken eggs.
Step 1. Pour water into a thick-bottomed pot and bring to a boil.
