How to make Classic Peach Wine
Each winemaker has his own secrets of making a drink, so the wine is distinguished by a variety of tastes. Recipes differ in the amount of sugar, water and spices used during fermentation. When a winemaker makes large quantities of peach wine at home, a classic recipe is chosen. For this you need:
- peaches - 10 kg;
- water - 6 liters;
- sugar - 4 kg;
- citric acid - 50 g.
The presence of citric acid preserves the taste and aroma of the peach, and stabilizes the level of acidity in the wine.
Prepared peaches are ground to a homogeneous gruel, pour it with water, add half the sugar and lemonacid. Pour the mass into a wine bottle. The top of the neck is covered with a piece of gauze so that debris does not get into the mixture. For fermentation, the container is placed in a warm place for 2-3 days, shaken periodically. After that, the pulp is filtered through a canvas or gauze to separate the juice, poured again into a bottle for wine and put on a water lock. After 5 days, they collect a little juice from the container, dissolve sugar in it and pour it back. The procedure is performed several times.
Fermentation lasts for 2 months. Then the fermented peach wine is removed from the sediment with a thin hose, poured into another container and put in a cold place for six months to ripen. During this period, filtration is carried out several times, after which the drink is bottled. Store in a cold place no more than 3 years.
Peach wine with alcohol
To get a strong wine drink, honey is added to the recipe to taste. The fermentation process lasts from 2 to 3 weeks, when it is over, the pulp is filtered and poured into the juice to give strength 2 liters of alcohol, nutmeg, cinnamon or vanillin are added to taste, left in a dark place for 3 weeks. The fermented juice is again removed from the sediment, poured into prepared bottles and kept in a cold place for 2 months. If a precipitate appears, the drink is filtered until it becomes clear. After 2 months, peach wine can be served.
