The set of basic components for puff pastry is small. It consists of only four products:

  • butter (margarine);
  • water;
  • flour;
  • s alt.

Preparing the classic puff pastry: the dough is kneaded from flour and water to a soft consistency, after which chilled butter is mixed into it. Oil and flour are taken in equal quantities. The process of making such a dough is quite long: a layer of dough is rolled out, butter is put in the middle, everything is foldedenvelope, rolled out again. The dough is then rolled up and stored in the refrigerator. After some time, the cold dough is rolled out in the other direction, folded and cleaned again in the cold. The rolling procedure is repeated several times. After that, you can start baking puff pastry products.

We offer several types of simplified test:

  1. Instant puff pastry. Put chilled butter and flour in a bowl, grind everything into small crumbs with a knife.
  2. Yeast puff pastry (sometimes called "torn"). Take a double norm of flour and one - butter. First, start the usual yeast dough. Oil is then rolled into it.
  3. Curd puff pastry. Cottage cheese, butter and flour are taken in equal proportions. Cold chopped butter is added to the flour, the cottage cheese is rubbed through a sieve on top of it and the dough is kneaded.
  4. Creamy puff pastry. Prepared according to the previous recipe. The components for it are as follows: flour, butter, sour cream (you can use cream). The following proportions are observed: 2:1:0, 8.

What to cook with puff pastry

This dough is very convenient to use. It can be frozen in the freezer, after defrosting it does not lose its nutritional value. You can make your own puff pastry or buy it at any grocery store. Then cut the dough piece into equal pieces. Buns are baked at temperatures up to 180 ° C for about 25 minutes, until golden brown.

For the filling, it is recommended to use not only raisins, but also various dried fruits, berries and nuts. For these buns, it is better to take puff pastry without yeast. Products needed:

  • puff pastry - 500g;
  • dried fruits - 150 g;
  • cottage cheese - 200 g;
  • sour cream 20% fat – 50 g;
  • vanillin and sugar to taste;
  • one egg.

First, prepare dried fruits: wash them well and pour boiling water for a few minutes. Drain the water and pat dry with a paper towel. Mix sour cream with egg and add to cottage cheese, add sugar and vanillin there. The mass is well mixed. If the dough is frozen, it should be allowed to rest for one hour at room temperature. At this time, you can prepare the poppy seed filling. It must be washed, poured with hot water (if desired, milk), add sugar and butter, put to boil over low heat. Keep on the stove for so long until the mass acquires a uniform consistency, and the poppy becomes soft.

Strudel can be prepared from this type of dough both as an appetizer and dessert. It depends on the choice of filling. We offer a recipe for puff pastry strudel with herbs and bacon. We will need:

  • 150g bacon;
  • 32 ml sol. oil;
  • 1 bunch each of dill, cilantro and parsley;
  • 500g puff pastry (yeast);
  • 30g cumin seeds;
  • 1 tbsp milk;
  • s alt;
  • egg.

The dough is rolled out into a thin layer, washed chopped greens are laid on it, sliced bacon and another layer of greens are placed on top. Season with pepper and s alt to your liking, roll up and leave to proof for 20 minutes.   • cinnamon - 3-4 tsp;
  • raisins - 50 g;
  • low-fat cottage cheese - 50g;
  • puff pastry - 1 layer;
  • green apples - 2 pcs.;
  • a pinch of sugar (better without it).

Apples, raisins, cottage cheese cut into small cubes are placed on a rolled out layer of dough, everything is sprinkled with cinnamon on top. To make the sauce:

  • 1 tbsp. l. mayonnaise and sour cream;
  • 1/8 tsp dried garlic and pepper;

All components for the sauce are combined and mixed. In a shallow bowl, combine cheese, mashed potatoes, bacon (cut into chunks), sauce, and scallions. According to the recipe, divide the puff pastry into 8 even squares, which are then laid out in a cake pan. On top of them is laid out the filling in the amount of one tablespoon. Cups are baked for 17 minutes and garnished with sour cream and green onion feathers (beautifully chopped).

Cheesecake

This delicious cream cheese dessert, encased in a crispy puff pastry shell, is sure to please any gourmet. For cooking you will need the following ingredients:

  • dough - 400 g;
  • cream cheese - 250g;
  • sugar - 150 g (plus 2-3 tablespoons needed for sprinkling);
  • sl. butter - 80 g;
  • vanilla sugar.

Roll out two layers of the same size, put one of them into the mold. Mix all the products listed in the recipe, and then beat. After that, pour the mass into a mold andcover with a second layer, carefully seal all edges. Use leftover dough for decoration. The confectionery product is baked for half an hour at 180 ° C. The most delicate and delicious pastry is obtained using puff pastry without yeast dough. Despite the fact that the manufacture of such a test is a laborious process, the result is worth it.   • mixed minced meat (beef, pork) - 300 g;
  • half onion;
  • puff pastry - 500g;
  • one egg;
  • garlic;
