Yeast dough is different. It depends on the method of its preparation, of which there are only two: steamed and unpaired. The difference here is in the amount of muffin added. These are eggs, fats, etc. Less of these products are added to the doughless dough. And, as a rule, products such as bread, flat cakes, unsweetened pies, etc. are prepared from it.
Which type of doughless dough is better to choose?
Now the Orthodox are having a Christmas fast, and those who adhere to this tradition can prepare a semi-finished product for baking without using milk or eggs. Indeed, to prepare such a dough, yeast can be diluted not only in warm milk, but also in water. You can also remove eggs from the recipe, which, in principle, are part of our semi-finished product. Is notviolate the technology of making yeast dough in a non-dough way. And for those people who do not fast, the usual recipe with eggs and milk will do.
Yeast dough rises a lot due to the yeast in it. And, as you know, it needs to be crushed during the time it settles before baking. By stirring it periodically, we expel carbon dioxide from the mass, which is the result of the vital activity of yeast. You also need to remember that when baking, the products will also grow strongly in volumes relative to the original ones, so we make sure that there is enough space on the baking sheet between the products or the baking dish is not filled to the top. This is all regardless of which option is chosen: lean or regular.
Simple dough
So, to carry out the process of making yeast dough in a non-dough way without adding any muffin, you will need a few ingredients. Among them are flour, water, s alt and yeast. It is calculated like this. For 500 g of flour, 200 g of water is taken. Yeast will need about 20 grams, and s alt - 1 teaspoon. When the amount of the required semi-finished product changes, the amount of ingredients also changes proportionally.
And here is the safe way of making yeast dough: yeast is diluted in warm water, it is mixed with flour and s alt, which we pour gradually. The dough is kneaded and left covered in heat for 3-4 hours. Periodically, you need to approach and knead it to lower it, otherwise it will “run away”.
To thisthe dough, if desired, you can add dried fruits, chopped nuts, and other fillings that you like.
Butter dough
Here's another steam-free way to make yeast dough. It has additional ingredients and is kneaded a little differently. So, in milk or water, heated to 30-40 degrees (a small amount of liquid is taken), we dissolve our yeast. We also dissolve 1 teaspoon of s alt and 2 tablespoons of sugar in milk or water in another bowl. A small amount of liquid is also needed. Mix together the sifted flour, one egg and the resulting two mixtures with s alt, sugar and yeast. Gradually, for 7 minutes, knead a homogeneous dough. Among other things, at the end of kneading, add melted butter and knead the dough to the end. Oil should be 30g.
This steamless method of making yeast dough also includes settling the semi-finished product. As a result, the dough must be covered in a saucepan and put in a warm place. Yeast will ferment and increase its volume. The dough will stand for three hours. During this time, it needs to be mixed several times so that it does not roll over the sides of the pan.
Which stuffing to add?
You can add dried fruits to rich yeast dough and bake, for example, a pie with dried apricots or raisins. Moreover, the filling can be added directly to the dough itself, so that it intersperses into the product, like Easter cake or buns, or you can wrap it up to make a pie or roll. As a filling for a pie or sweet pies, you can use variousjam or jam. You can also add fruits or berries to the sweet yeast cake. For example, apples. And there are buns with sugar, beloved by the population of the post-Soviet space. For this, you don’t need special fillings, and they are prepared simply simply.
From the usual yeast dough, you can fry or bake pies in the oven. We add potatoes, stewed cabbage, onions and boiled eggs and even cheese there. Unsweetened pies are also baked from yeast dough. You can add minced meat, the same potatoes, mushrooms to such a pie. Also, any pizza can be baked from sweet dough. There is no special recipe here. Just brush the thin round dough with tomato paste or ketchup, put on top what you have (minced meat, fish, sausage, etc.), add olives and grated cheese.
The main thing is to follow the technology of the non-dough method of preparing yeast dough. And the rest will tell fantasy.
